So I sat down tonight to write up my post for tomorrow (Monday) and I realized that I never wound up putting together my weekly meal plan post. Apparently, I’m losing my mind…whoops!
At any rate…it wasn’t all that spectacular of a week of eats, but considering I didn’t really meal plan and “winged it” most nights, I’d say we did alright. Here’s a look!
Sunday: Takeout grilled chicken salads from LaBella’s (our favorites!)
Monday: Roasted turkey breast with rice pilaf and cooked baby carrots
Tuesday: The hottest enchilada bake ever + rice…unless you like your mouth on fire when you eat, I wouldn’t recommend it!
Wednesday: Apparently I didn’t take any photos on Wednesday (like, at all) and I have no idea what we ate that night? Like, I even went into the fridge to look for leftovers because I can’t remember…although part of me wants to say it included salads??
Thursday: Sausage & Cheese Tortellini + green beans
I thought I’d get lucky and have the whole family get in on this one, but Lucas only wanted his green beans. Go figure?
Friday: Takeout pizza! Sausage, peppers, and onions (x2)
Saturday: A mix of pizza and Halloween candy
I think we’re gonna have a good mix on tap for this coming week since I actually did meal plan and prep!

How do you make the green beans so that you’re son eats them?????

Hahaha I think it was a fluke. We tried them the next day and he wanted nothing to do with them. ;)

We had company over last Sun. & roasted WAY too much pork butt (weren’t sure how many of the group would make it) so I was trying to creatively come up w/ recipes all week to incorporate the leftover pork butt. I must say it was actually pretty fun, & everything was delicious. I made fried rice w/ pork, BBQ pork quesadillas, chicken & brocolli divan (to get out of the pork rut), & on Fri. I found recipe online that called for simply mixing some salsa in w/ the pork & spreading it in the bottom of a casserole dish then pour the batter from a cornbread mix (just follow instructions on the box) & bake according to cornbread mix instructions. It was AMAZING!!!

Oh my god, that all sounds amazing!! Especially the casserole with the cornbread mix on top…totally need to try that!!
