It’s meal plan day!!
I almost didn’t post this week’s because, honestly, it wasn’t anything overly exciting or nutritious. But sometimes that happens, right? And it’s okay…it’s all about the balance (which, admittedly, we’ve not been doing a very good job with lately!).
But regardless, here’s a look. I’m just craving warm weather again so we can get outside and fire up the GRILL again. Ahhhh…how many more days until spring? Did the groundhog see his shadow…??

Sunday: Birthday dinner with family! Mom’s homemade chicken parmesan with pasta and cheesy garlic bread…YUMMM
Monday: Cheeseburgers with caramelized onions and green beans
Tuesday: Crockpot Amazing Pork Tenderloin with baked sweet potatoes
That recipe is really SO good and so easy. We’ve made it a few times now and it’s great for when pork tenderloins are on sale at the store!
Wednesday: Leftovers from Sunday’s dinner. Looking for an idea? How about some Skinny Chicken and Broccoli Alfredo??
Thursday: Side salads with takeout pizza from one of our favorite spots
One slice of BBQ Chicken + one slice of plain cheese!
Friday: Stuffed Peppers…which wound up being more like a stuffed pepper casserole
But we weren’t complaining because they turned out awesome!! You guys interested in a recipe?

I’ve really been slacking on keeping our meals balanced in terms of extra veggies and lean meats so I’m hoping to start doing better with that soon. Sometimes winter is just so tough…I just want hearty, comforting, carb-filled goodies :-D

Your birthday meal looks so good! And caramelized onions on burgers are the best. Literally.
It can definitely be tough to eat enough veggies throughout the winter. It’s hard to resist fresh local veggies at the farmer’s market during the summer than it is to get them out of the freezer at the grocery store during the winter.

Hey Courtney! Meal planning and prepping over here has been pretty slim to none as well, I need to get back on track with that. You are right though, it is all about balance. I would definitely be interested in that stuffed pepper casserole, it looks yummy!!

I think this looks like a delicious week of meals! Especially the chicken parm and the stuffed peppers. This week is unfortunately super boring for me in terms of food, because my boyfriend and I are doing a week-long super healthy eating/no alcohol/nothing fun cleanse. Ugh. However, I know the reset will be good for my body, and come Sunday I’ll be more than ready for mimosas and pizza and. :)
