Happy Sunday to you all! You know what today is…meal planning day! Everyone ready to figure out their own menus for the week? We’ve got ours set, but in case you’re in need of some ideas, here’s a look at what we had this past week.
Sunday: Easter dinner
Monday: Italian Pizza Bake + green beans and carrots
Tuesday: Chicken Nuggets with Crispy Potato Chips and Honey Mustard + grape tomatoes
I had apparently saved that recipe back from one of my Cooking Light magazines in 2012. I noticed it in my recipe binder last week, and decided to give it a shot. The chicken was amazing (having it marinate in buttermilk + dill pickle juice = delicious), and the potato chips were good, too. They took us more than double the amount of time to cook than the recipe said, but it all worked out in the end. We’d definitely recommend this one!
Wednesday: Cereal with almond milk, bananas, and blueberries
The plan was to have leftovers, but nothing was sounding appealing to me and I was being super indecisive. I spotted cereal in the cabinet, and it wound up being the best decision I could have made. Sometimes, cereal for dinner is just where it’s at (I had a mix of Special K Cinnamon Brown Sugar Crunch Protein Cereal + Raisin Bran Crunch).
Ham, egg, and provolone sandwiches are never a bad idea either. I had this for lunch yesterday…mmmm mmmmm.
Thursday: Chicken Souvlaki Pitas + veggies on the side (unpictured)
I cooked them a little bit different than last time, making it a bit easier by simply sautéing the chicken over the stove, rather than skewer and grill them. Much quicker and tasted just as good!
Friday: Leftovers – I finished up the rest of the chicken from Thursday night’s dinner along with a couple other odds and ends from the fridge, but no photo. Need some ideas?
- Grilled Chicken + Light & Tasty Zucchini Casserole
- Stuffed Spaghetti Squash (<—SUPER filling, and loaded with veggies!)
- Cheesy Crab & Shrimp Shells
Saturday: Dinner over at Kanika and Shaheen’s house (word on the street is that some chicken parm may be involved…I’m sure I’ll have some more info tomorrow!)

Wow, everything looks so good and pretty healthy, to be honest. I have trouble with portions, and you seem to grasp that pretty well. I can learn from your photos! Thank you for some great meal ideas for when I get home in the summer :)
