Well hello, and Happy Mother’s Day to all my fellow mamas out there (to both the human and furry kind alike!). I wish you all a fabulous day, whatever you may be doing!
As for me, I’ll be enjoying a delicious brunch, some quiet time, and a fun cookout, so it’s sure to be a great, busy day. I’m sure I’ll fill you all in tomorrow, so for now, let’s get to the meals! Here’s a look at what we had this past week…
Sunday: Easy Crockpot Chicken and Biscuits (a leftover portion from the freezer) + green beans
There was really no way around getting that meal to look appetizing. It’s definitely a good recipe, but it’s just not totally photogenic.
Monday: Grilled chicken, mac & cheese, and green beans (<—can you tell we had a REALLY big bag of frozen green beans??)
The mac and cheese was a Van’s meal (Ultimate Cheddar Penne – gluten free) and it was delicious. We were both really impressed with all three of the Van’s meals that we tried, and we would absolutely purchase these again. Quite yummy!
Tuesday: Cheeseburgers on the grill and pasta salad
Wednesday: Chipotle takeout, baby. Had to make up for our lack of Cinco de Mayo festivities on Tuesday!
Thursday: It was a softball game night for Jay, so we kept it easy again with sandwiches. Turkey, avocado, tomato, and pickles with honey mustard on wheat bread.
I will never, ever grow old of a turkey sandwich with veggies. One of my favorites, for sure!
Friday: Date night out! I’ll share more details in tomorrow’s post, but for now, I’ll let you know that we had the most amazing spinach, artichoke, and shrimp dip.
And a pretty delicious wood fired pizza, enjoyed al fresco.
Saturday: Meatball and Ziti Bake with green beans
I already had a batch of chicken parmesan meatballs in the fridge for Lucas, and since he’s not interested in them right now (……) I figured this would be a great way to use some up. I did a slightly modified version of this recipe, subbing in my own meatballs and just letting the cheese melt on the stove top (without broiling). It was quick, easy, and super good. Definitely a keeper for quick weeknight ideas, too.
