In an attempt to clean up and get ready to launch a brand-spankin new recipe page (hopefully in the next few weeks!), I’ve been going through a lot of my old recipe posts and making a few changes on the back end. In doing so, I not only came across some tried and true favorites, but I was also reminded of some of my older, lighter dinner recipes that I used to keep in the dinner rotation ALL the time!
Some of these I already know are favorites for many of you, but there are some that may wind up being new for you, too. So if you need some ideas, I’ve gotcha covered!
Skinny Chicken & Broccoli Alfredo
This recipe. Oh. my. god. Such a decadent tasting, yet light and delicious recipe. Perfect over pasta, zoodles, or spaghetti squash.
Lightened Up Chicken Pot Pie Soup
This was one of those recipes that I came across and said, wow, I totally forgot all about this one!
Healthy Taco Salads with Creamy Cilantro Lime Dressing
This salad is so full of flavor and is perfect for any time of year. A great way to add in a salad as a weeknight dinner that’s filling enough for a meal.
Tilapia Tacos with Roasted Corn Relish
Jay and I definitely went through a span of time where we were making this recipe all the time. It comes together super quick, it’s full of flavor, and the corn relish is good on just about anything (especially mixed into a salad the next day!).
Healthy Chicken Parmesan Burgers
One of my most popular recipes. If you haven’t tried them already, you’ve totally got to do yourself a favor. They cook up perfectly on our Griddler when it’s too chilly to get out to the big grill, too.
Lightened Up Spaghetti Pie
A delicious spin on a class spaghetti dinner. Incorporate whole grain pasta and load up on the veggies, and you’ve got a hearty, filling meal you can feel good about.
Pumpkin Black Bean Soup
Another old favorite that had me scratching my head like, whyyyy haven’t I made this lately?!? Perfect for these colder months, it’s comforting and filling, and full of all sorts of good stuff. Make a batch on Sunday and have plenty of leftovers for lunches during the week.
Lighter Mac ‘n Cheese with Chicken & Tomatoes
I mean, who doesn’t love a good mac ‘n’ cheese recipe, right? I’ve always been a huge fan of homemade mac and cheese, especially when it has tomatoes in it.
Low-Fat Crockpot Veggie Stew
If there were EVER a recipe that I really need to re-photograph, this is it. This recipe has been one of my most popular recipes on Pinterest for quite some time now, and although the pictures surely don’t do it justice, it’s one of my favorite crockpot recipes.
Light ‘n Easy Cincinnati Chili
I’m sure you guys have seen this one before if you’ve been reading for any amount of time, then I’m sure you’ve seen me post about this one. It’s a favorite in our house for sure, and is great as leftovers, too!
