Happy Valentine’s Day, everyone! Who out there is partaking in all of the lovey dovey activities? Anyone?
We are not. We’ve never been huge Valentine’s Day people (although we do love a good excuse for a good dessert), so we’re pretty low key over here. Maybe I’ll go raid the candy aisle tomorrow when it’s all 50% off…who knows?!
At any rate, it’s meal plan day! Sorry I missed out last week, the weekend got away from me. But here’s a look at this past week. I really only planned out 3 meals for the week, and we “winged it” for the rest of them. But all in all, it worked for us!
Sunday: Super Bowl snacks!
Monday: Chicken sandwiches (made with this crockpot chicken!) with french fries and green beans
Tuesday: Emily’s Famous Sloppy Joe’s with side salads
Wednesday: Leftover pizza (hey, we missed National Pizza Day on Tuesday, figured we should partake).
Thursday: Brinner! Kodiak Cakes pancakes with a side of bacon. SO good.
Friday: Shredded Mexican Chicken & Corn Quinoa Bowls
I’ve had this recipe pinned for a while now, and it was actually the meal I was supposed to make on Wednesday, but I forgot to put it in the crockpot. Either way, it was really good, and I felt totally healthy healthy eating it. Especially with it being on a Friday night and all.
It was paired with some lemonade in a wine glass, of course.
Saturday: Dinner at Sarah and Jeff’s house!
I just finished up our meal plan for next week, and although we’re keeping things simple, it’s looking pretty good. How about you guys? What’s on the menu this week? Have you tried any awesome new recipes lately??

We’ve been ordering blue apron and loving it! Saving all of the recipes to remake when we have company. I laughed when I saw your lemonade in the wine glass. I think I’ve found my new favorite ‘mocktail’ – seltzer water + fresh squeezed orange juice + maraschino cherries in a wine glass obviously!

Are those onions on top of the chicken sandwich? How do you get them so nice and burned/caramelized?

Hmmm…I’m not sure, haha?!? Low heat, simmer for a while with olive oil, salt and, pepper!

Have you ever tried pioneer woman’s sloppy joes? A registered dietitian told me about them and now I can’t make them any other way. Life changing! I need to try your method of cooking a whole chicken. The idea of it always seemed complicated so I love your easy method!
