Hey friends, how’s the weekend treating you so far??
We have been BUSY over here, with a jam packed Saturday filled with work around the house, running errands, and enjoying the umm, almost 60 degree weather. Seriously February, I’m loving you this weekend. Can we keep this streak going for a while?
Unfortunately, I have a feeling that won’t be the case, so I’ll just continue counting down my days until spring. AND, I’ll go ahead and share last week’s meal plan with you all in the meantime. Here’s a look!
Sunday: Valentine’s Day dinner in (<—details in that post!)
Monday: Lots of leftovers! Leftover sloppy joe’s, roasted potatoes, and green beans (had to use up some of what was in the fridge)
Tuesday: One Pot Lasagna Soup + fresh sourdough bread and butter
I already love this recipe, like, so much…but this time, I actually cooked it in the crockpot and it was incredible. I also swapped out the broken lasagna noodles for 2-1/2 cups of small shells pasta and it was out of this worrrrrrld. Make this!!
Wednesday: Homemade chicken nuggets and honey mustard dressing + baked sweet potatoes and corn
Thursday: Panera takeout! I got a You Pick 2, half broccoli cheddar soup and half the Frontega Chicken sandwich.
We were both feeling lazy on Thursday and neither of us really felt like cooking, so Jay picked this up on his way home from work. It was delish AND involved zero cleanup, so A+ for a Thursday.
Friday: Out to dinner with Brian and Mal! I’ll have more in tomorrow’s post, but although this does just look like a huge pile of fries, there was actually a really delicious turkey bacon sandwich hidden in there, complete with cheddar, apple slices, and maple mayo.
Too bad for me, I left the other half of it sitting in the box of leftovers on the table and didn’t realize it until we were about 10 minutes into our drive home. Major boooo.
Saturday: Grilled tomato and cheese sandwiches + chicken noodle soup
Easy comfort food at its finest, right?

I’ve been so curious about Blue Apron. I’m an excellent cook, but I feel like BA would “force” me to try new things and new ingredients. I’m just so hesitant about the cost of a meal delivery service. Two weeks free would help me evaluate its worth.

As of right now, I don’t have too much planned for the week ahead, so I think I’m going to try and see how many meals I can come up with based off of stuff we already have in the house. I know we have some leftover frozen meals in the freezer, and I did just buy some chicken yesterday…so we’ll see what we come up with.

The one crockpot lasagna sounds soooo good! What setting did you have it in the crockpot? Did you do anything different?

I’m wondering the same. I clicked on the recipe link and it looks like it’s made on the stove, so what setting/how long do you cook it in the crockpot? This looks SO delicious!!

I made that lasagna soup! Thanks so much for posting it. It was easy, made great leftovers, and my husband loved it. I like a lot of the recipes you post, they are definitely my style lately. <3

Mine cooked on low for about 7-8 hours then I added the noodles in about 30 minutes before we ate it (so they wouldn’t get too mushy from cooking all day!)
