I love breakfast. Like, seriously love it. It’s my absolute most favorite meal of the day, and if I had the time every day, I would make myself a smorgasbord of eggs, pancakes, bacon, toast, and anything else under the sun.
Unfortunately, that’s way beyond reality over here. When I’m at work, most days I barely have enough time to toss an English muffin and a banana in a baggie to toast up once I get to work. And while I’m home with two kiddos? Well, let’s just say a breakfast of “snacks” and bites here and there of this and that can easily go down.
I’ve been telling myself lately that I really need to start planning better on the weekends. A lot of people use their weekends to meal plan for lunches and dinners for the week, but I feel like breakfast – that most important meal of the day! – is often overlooked. And the truth is, there are plenty of delicious and easy recipes and ideas out there that you can put together on a Sunday afternoon. Creamy Crockpot Steel Cut Oatmeal
Man, I really love this recipe. After making it a few times now, I’ve determined that it’s best to make it during the day so you’re able to stir it up every now and then (to prevent sticking and/or getting a filmy top). I’ll sometimes start it on a Sunday morning and just let it cook throughout the day until it reaches a consistency I like, then I pack it into separate containers that I can just grab and go with during the week!
*I always add a little extra almond milk to each container too, since it will need a little extra creaminess as the week goes on.
Streusel Topped Wild Blueberry Coffee Cake
Allllright, so maybe this isn’t the healthiest option in the bunch. But who cares. It’s good. Like, REAL good. And hey, it’s loaded with blueberries that are full of good stuff, so that’s got to count for something, right?
Pair a small-sized portion with some fruit and a hardboiled egg for a complete meal!
Apple Cinnamon Raisin Baked Oatmeal
I was recently reminded of just how good and EASY this recipe is. You can whip it up in no time, and then you’ve easily got yourself breakfast for the entire week. Once it’s baked up, I stash it in the fridge, cut out my portion each day, add a little extra almond milk, heat, and go. My favorite toppings are usually banana slices, or just some extra raisins and a dash of cinnamon.
It may not photograph very well, but just trust me!
Veggielicious Egg Casserole
For those that like breakfast a bit more on the savory side, these eggs are packed with veggies and have an added dose of protein with the combination of eggs and cottage cheese.
Oatmeal Raisin Banana Muffins
This is an older recipe that could use some photo updates, but that shouldn’t take away from the deliciousness that it is. They’re great for tossing in the freezer, too, so feel free to make a double batch if you’ve got lots of ripe bananas on hand, and take a few out at a time when you need ‘em.
Triple Lemon Blueberry Muffins
Seriously, I’m pretty sure that this has become one of my absolute FAVORITE muffin recipes since making them a couple of months ago. I know many of you have tried them already, but if you’re one of the ones that hasn’t, promise me you will?!
Pack one up with a piece of fruit and a hardboiled egg (or maybe a protein packed smoothie) and you’re good to go!
