We’re all busy, right? If your house is anything like mine, then mornings are typically a madhouse. But don’t let the chaos sacrifice a good breakfast! Today, I’ve got 6 of my favorite make-ahead breakfast recipes that are perfect for busy mornings!
**********************
I love breakfast. Like, seriously love it. It’s my absolute most favorite meal of the day, and if I had the time every day, I would make myself a smorgasbord of eggs, pancakes, bacon, toast, and anything else under the sun.
Unfortunately, that’s way beyond reality over here. When I’m at work, most days I barely have enough time to toss an English muffin and a banana in a baggie to toast up once I get to work. And while I’m home with two kiddos? Well, let’s just say a breakfast of “snacks” and bites here and there of this and that can easily go down.
I’ve been telling myself lately that I really need to start planning better on the weekends. A lot of people use their weekends to meal plan for lunches and dinners for the week, but I feel like breakfast – that most important meal of the day! – is often overlooked. And the truth is, there are plenty of delicious and easy recipes and ideas out there that you can put together on a Sunday afternoon. Just a couple of quick steps and BOOM – you’ve got breakfasts for the week ahead.
So whether you’re a working mom or dad, a stay-at-home mom or dad, or basically anyone who just loves to eat breakfast, then be sure to check out these six delicious and easy recipes that can be made ahead for your breakfasts all week long. I promise, you’ll love ‘em!
Creamy Crockpot Steel Cut Oatmeal
Man, I really love this recipe. After making it a few times now, I’ve determined that it’s best to make it during the day so you’re able to stir it up every now and then (to prevent sticking and/or getting a filmy top). I’ll sometimes start it on a Sunday morning and just let it cook throughout the day until it reaches a consistency I like, then I pack it into separate containers that I can just grab and go with during the week!
*I always add a little extra almond milk to each container too, since it will need a little extra creaminess as the week goes on.
Streusel Topped Wild Blueberry Coffee Cake
Allllright, so maybe this isn’t the healthiest option in the bunch. But who cares. It’s good. Like, REAL good. And hey, it’s loaded with blueberries that are full of good stuff, so that’s got to count for something, right?
Pair a small-sized portion with some fruit and a hardboiled egg for a complete meal!
Apple Cinnamon Raisin Baked Oatmeal
I was recently reminded of just how good and EASY this recipe is. You can whip it up in no time, and then you’ve easily got yourself breakfast for the entire week. Once it’s baked up, I stash it in the fridge, cut out my portion each day, add a little extra almond milk, heat, and go. My favorite toppings are usually banana slices, or just some extra raisins and a dash of cinnamon.
It may not photograph very well, but just trust me!
Veggielicious Egg Casserole
For those that like breakfast a bit more on the savory side, these eggs are packed with veggies and have an added dose of protein with the combination of eggs and cottage cheese.
Oatmeal Raisin Banana Muffins
This is an older recipe that could use some photo updates, but that shouldn’t take away from the deliciousness that it is. They’re great for tossing in the freezer, too, so feel free to make a double batch if you’ve got lots of ripe bananas on hand, and take a few out at a time when you need ‘em.
Triple Lemon Blueberry Muffins
Seriously, I’m pretty sure that this has become one of my absolute FAVORITE muffin recipes since making them a couple of months ago. I know many of you have tried them already, but if you’re one of the ones that hasn’t, promise me you will?!
Pack one up with a piece of fruit and a hardboiled egg (or maybe a protein packed smoothie) and you’re good to go!
How about you guys? What are some of your favorite breakfast recipes (make ahead or not!)?
Ellen @ My Uncommon Everyday says
Yes to make-ahead breakfast. I make a big egg bake like yours on weekends and divvy it up to have throughout the week. Lately, I’ve been making a bunch of night-before smoothies and just pulling them out of the fridge in the morning. I also saw a recipe on Fitnessista for sweet potato breakfast bowls that has my name alllll over it, so I’m looking forward to trying that soon!

I made the best ever breakfast last night to enjoy this morning! It was zucchini bread overnight oats! 1/3 cup rolled oats, 1/4 cup plain greek yogurt, 1 scoop caramel protein powder, 1/2 cup shredded zucchini, 1/2 cup vanilla almond milk + lots of cinnamon and nutmeg. Topped it off this morning with a drizzle of almond butter! So delicious!

Tell me more about this caramel protein powder…?!? Good??
Kelsey says
It is Quest protein in Salted Caramel flavor – seriously my favorite protein ever. Makes everything taste like cookies! :)

These look delicious! Latley, I’ve been loving chocolate/peanut butter protein smoothies! It reminds me of a Wendy’s frosty ;)

I made a double batch of your cinnamon scones a few weeks ago and but the second batch in the freeze. Baked them yesterday, and they were very delicious. They are also a great make ahead breakfast. Problem is that I can just eat one.

I agree so much with you – I love breakfast but making it every morning just doesn’t happen for me. I did have some luck of a consistent, healthy breakfast when I was eating overnight oats! The “STREUSEL TOPPED WILD BLUEBERRY COFFEE CAKE” sounds so delicious! Going to try that one very soon!

Those looks delicious! Can’t wait to try it!

My breakfast is usually quite simple. Sometimes simple is just better.Sometimes, I have avocado toast with egg. Top two lightly toasted slices of whole-grain bread with smashed avocado and a sprinkling of salt and pepper. Layer on two sunny-side up eggs for a healthy dose of protein, and you’ve got a well-rounded breakfast. Stack ’em in a tupperware container for easy transport or cook the yolks a bit more and make the whole thing into a sandwich. Recipes above look so appealing! Going to try those one very soon! Thanks for sharing!
