Zucchini are just starting to reach peak season, and you’d be surprised with just how versatile and FUN of an ingredient it can be. Today, I’m sharing 6 zucchini recipes that are all different and totally delicious in their own way!

Once upon a time, I attempted to turn my black thumb green and grew a garden. While the garden wasn’t totally successful, one veggie that grew overly abundant was zucchini. Do any of you remember back in the day when I gave myself time to garden and we grew some ridiculously large zucchinis?!
I’m hopeful that maybe by this time next year, I’ll be ready to start up a garden once again. I think it would be a fun activity to have the kiddos help with (well, at least Lucas for next year), and I’m always a fan of growing your own food/veggies. I’m just not that great at it. Well, besides zucchini, apparently.
So back in the day when I was growing zucchini out my ears, I wound up having a lot of fun using the versatile ingredient in lots of different recipes. And today, I’m sharing 6 of my favorites – everything from casseroles, to breads, to…cupcakes!

Favorite ways to eat zuchinni? Sautéed, raw in a salad, steamed, and in zuchinni bread. Because, carbs. ;)
I made the zucchini casserole last night. I add mushrooms and tomatoes to it since I had some that I needed to use up. Turned out really good. Thanks for sharing that recipe.
We LOVE zucchini bread, My grandmother used to always make it…such a sweet memory! We also like making zoodles with roasted red peppers and goat cheese!
Yum! We do LOTS of zucchini in this house. I think the casserole will be next on my list. My fav is a teriyaki salmon and zucchini recipe that is super easy. I think it was from Health Magazine.
