8 More Recent Dinner Winners

I’ve been so bad about snapping pics of our dinners lately that some of these meals span back to at least 5-6 weeks ago. Whooops! But hey, who cares. Yummy dinners are fun no matter how long it’s been since you ate them.

So here’s a look at what we’ve had and enjoyed (sorta) lately!

Homemade Tostadas with Salsa Verde Carnitas

This recipe came from the new Lillie Eats & Tells Cookbook, and let me tell you….they were out of this world!!! This is the first recipe I’ve made from the cookbook so far, but with the rest of the leftover carnitas, we’re planning on making the BBQ Quesadillas next. And I’m pretty excited.

Chicken Parmesan Burgers with french fries and green beans

Pretty sure you’ve seen this exact meal on here once or twice…or twenty times. But who’s counting. They’re just SO easy to make, and both boys love them, so it’s a recipe we keep in the rotation quite often!

Grilled Pizza with roasted asparagus

I just realized I’ve already shared this meal with you before, but ahh well. Grilled pizza is always worth sharing more than once. Speaking of…I’ve got some pizza dough in the freezer we need to take out soon, because we’re due for some more!

Crockpot Salsa Ranch Chicken with mixed veggies

That chicken/pasta recipe photographs about as well as oatmeal (gross) but don’t let the pictures fool you. It was actually quite tasty! We just used regular ranch (as opposed to the fancy one suggested in the original recipe) and it worked fine for us. Both boys ate it, so we called it a win.

Burrito Bowls + Chips and Guac from Chipotle

This particular meal came courtesy of some of our amazing neighbors, John and Tal, who graciously offered to go pick some up for us after having been home all day with a sick Lucas (this was a few weeks ago, when we thought he had strep, not sure if that ever made it to the blog or not…). It was such a simple gesture, but very much appreciated! Plus, when doesn’t a meal from Chipotle lift your spirits?

Mini Cheddar Meatloaves with mac salad, green beans, and cornbread

This is another meal I’ve already shared, but I’m lumping it up with all of these just because I feel like it. My MIL said the recipe came from a cookbook of hers, but based on what she described, it looks like this recipe is very similar, if not the same. They were REALLY good!! Plus, cornbread. LOVE.

Bacon Brown Sugar Garlic Chicken with corn on the cob and roasted asparagus

Do yourself a favor and go bookmark, pin, whatever you have to do with that recipe because it was delicious. And EASY! I quickly threw it together in the morning before work and then was just able to pop it in the oven later in the day. The flavor was amazing! And both boys ate it, so double win.

Okay, now I’m getting boring. Can you tell we like asparagus? And, umm, bring on the corn on the cob season! We kept the chicken simple and just used the marinade from this recipe before grilling. A lot of the time, as long as the weather permits, a lot of our summer meals will look a lot like this…something to grill, corn on the cob, maybe a salad, or another roasted veggie.

But light and simple is what we crave for summer. Plus, it helps save more room for that ice cream for dessert. ; )

    Girl you’re meals look so good! And that so sweet that your neighbors got you Chipotle..my neighbor brings us tree and grass trimmings in a bag and called it neighborly salad.
