Alright, who’s hungry for some Apple Cinnamon Raisin Baked Oatmeal?
As I mentioned before, I wound up making this delicious batch of baked oatmeal over the long holiday weekend, in an attempt to have some sort of breakfast item on hand for during the week. It seemed like lately, my breakfasts were getting pretty sad – basically whatever I could grab quick – and since breakfast is my absolute favorite meal of the day, this was definitely no good for business.
So enter, baked oatmeal. All I need to do is cut out a piece, reheat in the microwave, and add a splash of milk and some fresh fruit. Good. To. Go.
While I’m sure you could really do any sort of combination of fruits within the oatmeal (pumpkin, anyone?) I was loving the idea of the apple-cinnamon-raisin trio. It’s always been a favorite of mine, and it certainly doesn’t disappoint in this recipe either.
Apple Cinnamon Raisin Baked Oatmeal
Ingredients
- 2 cups old fashioned oats
- 1/3 cup light brown sugar
- 1 1/2 teaspoons cinnamon
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1-1/2 cups milk I used 1%
- 1/2 cup unsweetened applesauce
- 2 tablespoons melted butter
- 1 egg
- 1 teaspoon vanilla
- 1 large Granny Smith apple peeled, cored, and diced
- ~1/4 cup raisins
Instructions
- Preheat oven to 350 degrees F. Coat an 8x8 baking dish with cooking spray and set aside.
- In one bowl, combine oats, brown sugar, cinnamon, baking powder, and salt. In another bowl, whisk together milk, applesauce, melted butter, egg, and vanilla. Pour wet ingredients over dry ingredients and stir until combined. Gently stir in diced apples and raisins.
- Pour oatmeal into prepared baking dish. Bake for 20-25 minutes or until oatmeal is golden brown and set.
- Best if served warm – if needed, reheat in the microwave for 1:30 – 2:00 minutes. Serve with a splash of milk and some fresh fruit. Enjoy!

I completely agree with you! Baked oatmeal is truly delightful and worth trying. It offers a different twist to traditional oatmeal, as it becomes wonderfully warm, soft, and slightly crispy when baked. The combination of flavors and textures makes it a delightful breakfast or snack option.

I have been making baked oatmeal for my breakfast for months now – I just can’t get enough! The recipe I use is actually very similar to this, except I don’t add any fruit to mine (fresh or dried) so that I can customize it in the morning with whatever extras I’m feeling that day. However, I must say that my favorite toppings right now are sliced bananas, a drizzle of honey, cinnamon and of course plenty of PB. I just reheat in the morning and add my toppings of choice. I don’t add the milk though, just a personal preference.

Yes! This is perfect! I totally get where you’re coming from re: breakfast. It’s my favorite meal of the day, but since Hunter, it’s become more of just a “hurry up and get something in me” kind of meal. This is a great idea to make ahead!

I would love to try it with pumpkin too…anything fall related makes me one happy girl. :) I need to start making baked oatmeal, I’m always looking for a make-ahead breakfast option so when my husband and I are running out the door to work (which happens on a daily basis in my house) we have something healthy we can grab on the go!

In the recipe it says to use an 8X8 inch pan, but your photo looks like a 9X13. What is the correct size pan for this recipe? Thanks!

It’s actually an 11×7 in the photo which would be comparable to an 8×8. I just didn’t have mine available at the time :)

Hey Courtney! Long time reader, first time commenter!
I made this last and subbed the raisins for dried cranberries and WOW! So good. I don’t think I’ll be able to eat regular oats again. Love all your receipies because you use “normal” ingredients that aren’t difficult to get in my neck of the woods (Halifax, Nova Scotia. Wish we had Trader Joe’s and Whole Foods!)

This looks amazing. However, it would be so much better using real cinnamon known as Ceylon Cinnamon instead of the normal Cassia cinnamon. And it would be better for your health too.
