I’m currently sitting down at my computer with a full, happy belly and listening to the sweet sounds of Jay and Lucas playing upstairs in the tubby.
It’s Sunday night and we just finished up one of the most AMAZING dinners we’ve had in a long time over here. Seriously…
Since it’s Valentine’s Day and all, we decided to “splurge” a little with a delicious cut of grass-fed beef tenderloin for dinner. We’ve never really been ones to go out for Valentine’s Day, but we like to have a little something special at home. So tonight, we had Herbed Beef Tenderloin with Garlic Parmesan Roasted Potatoes and green beans.
Ladies and gents alike…if you’re looking for a date night meal to impress your significant other one with, TRY THIS. We both tag-teamed it and were 110% thrilled with how it all came out. SO good!
As for the rest of the weekend, it was fun! We didn’t have a whole lot in the way of plans except for a fun Saturday evening with our cousin/friends (I never know what to call them…they’re best friends but cousins, so…) Sarah, Jeff, and their little guy, Chase.
It was so nice catching up with Sarah and Jeff, and it was equally fun watching these two play together and run around like crazy.
Man, they sure are growing up (<—I told you I had these pictures somewhere, Sarah!).
Other than hanging with that cool crew on Saturday evening, we were low key. Jay worked some more in the basement…
I made Voluminous Oats for the first time in FOREVER, and it tasted so good.
Like, SO good. Topped with some fresh blueberries, peanut butter, and granola. I think I’ll be having this again tomorrow.
I got in a good T25 workout and did my meal planning for the week ahead during a nap time…
Lucas and I braved grocery shopping in the frigid temps while Jay went to go get a new battery for my car because it died…
We played with lots and lots of cars…
Lucas and mommy both got haircuts from my mom on Saturday morning (I chickened out and didn’t go for a full cut, but I’m still debating on it!)…
My pink eye finally went away! Today may be the first day I attempt contacts again in almost 2 weeks…Wooo Hoooo!!
Jay surprised me with some delicious chocolate covered strawberries for Valentine’s Day on Friday.
I mean, just look at how beautiful those babies are?!
True love right there. <3
So with that, I think I’m going to wrap this post up and go head on in to snuggle with my valentine on the couch for probably about 15 minutes before I fall asleep.

Yum, dinner looks delicious! We actually made plans and went out. It was a wonderful date and change of pace from our usual dinner and Netflix, haha!

My Valentine’s Day was pretty low key – it ended with dinner at my grandparents with a bunch of my cousins haha

We like to stay in a cook on Valentines Day as well. We went with a steak tenderloin as well, with roasted root vegetables, and we made a chocolate molten lava cake for dessert which was to die for! Glad you guys enjoyed yourselves!
