Happy Tuesday my friends! How we all doin’ on this lovely, frigid day?
We’ve actually moved into the positive numbers this morning…

Workout
I got myself up for a workout this morning, but not before hitting my snooze button about 4 times (GRRRR) so my time was cut short. Whenever I’m short on time, I go HIIT all the way! So this morning went a little something like this:
0-3 mins – Warm Up, 4.0mph
3-23 mins – Sprint 20 seconds @ 9.0mph / Recover 40 seconds @ 4.5mph
23-25 mins – Cool Down, 4.0mph
I’m hoping to be able to squeeze in some yoga when I get home this afternoon!
Breakfast
Last night I was totally on top of my game, so I prepped an old favorite…
Overnight Oats in a Jar
- 1/3 cup oats (heaping)
- 1/3 cup vanilla almond milk
- 1/3 cup water
- 1/2 mashed, very ripe banana
- Raisins
- 1/2 tsp vanilla
- 2 tbsp plain Chobani Greek yogurt
- Cinnamon & Nutmeg
And of course, peanut butter! I got overly excited when Jay showed me that he finished off his jar yesterday. He’s so good…he knows now not to throw them away on me.
Today’s OIAJ was the first time I’d ever added Greek yogurt, and let me tell you. I’ll never make ‘em differently. The yogurt adds such a nice, creamy texture.
Topped with a little granola action…
A delicious breakfast, indeed!
And considering I completely missed National Peanut Butter Day yesterday (how could I?!?) this is my special homage to the creamy good stuff.
I love you peanut butter.

Call for Recipes!!!
Alrighty guys, I need your help. I’ve been craving pancakes for dinner for weeks now, and tonight is the night Jay and I are finally goin’ in for the kill.
However…
I need a good pancake recipe!?!
Jay and I will usually just use Bisquick mix to make them, which is great, but I want to see what else is out there…
I’m really craving some delicious, warm, big fluffy pancakes!!

This is my grandma’s recipe:
Ingredients
1 1/2 cups all-purpose flour
3 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 1/4 cups milk
1 egg
3 tablespoons butter, melted
Directions
In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
Heat a lightly oiled griddle over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

I’m surprised you haven’t yet experienced Chobani’s Perfect Pancakes: http://www.chobani.com/kitchen/detail/id/43. You could substitute any flavor of Chobani yogurt in this recipe…

Hahaha I love that you’ve trained the hubs not to throw away PB jars. My boyfriend knows not to as well…it’s awesome because he’s a PB fiend too.

Okay…I’m going to be the nerd who asks… how do you make oats in a jar? I tried microwaving my oats with almond milk in the jar annnnnd the jar melted. :)

I make banana oats on the stove, and then pour them in the jar when there’s just a little PB left over. :-).

1 cup milk
1 egg or 1 egg replacer
2 tbsp butter or margarine, melted
2 tbsp sugar
1 tsp pure vanilla extract
1 pinch salt
1 1/4 cup all purpose flour
1 1/2 tsp baking powder
Whisk the milk, egg, butter, sugar, vanilla and salt. Stir in flour and baking powder.
Let the batter rest for 10 minutes. Heat a skillet over medium heat and add a little butter. Use 1/3 cup batter to make approximately 6 medium pancakes. Let cook for 4-5 minutes, until there are bubbles on top. Flip and cook for a few minutes.
If you don’t use all the batter, keep in the fridge to make some again later!

Trust me when I say, I’ve mad MANY pancake recipes. Ones with yogurt, different flours, different kinds of milk, etc. These are my favorite as well as my husbands. They come out nice and fluffy and have such a great taste to them. You can leave them plain, add blueberries, chocolate chips, etc.
Read the tips that given on that website.
The most important tip is to NOT over mix the batter! Lumps are good here!

My mom also made up some banana pancakes and sent me home with some for the freezer. I don’t know what recipe she used but you could make banana nut pancakes and top them with peanut butter! =)

here is by far the easiest pancake recipe EVER and they are amazing! light and fluffy, I added some frozen blueberries as well :) My only recommendation is to add a tsp. of vanilla and make sure you sift the flour because it makes them a lots fluffier! (I only did it once, I think it says do it twice, but I didn’t find it necessary) Also, I only used a half of a tablespoon of butter, I think three tbsp. is a little extreme so I would just kind of add it as you need to grease the pan.
