Good Mornin’ Folks! In case you missed it, I recently shared my recipe for Cranberry Apple Bread over on Heather’s blog. She’s doing an amazing set of posts for “Handmade Christmas,” which also included a little kitchen action. ;)

But in case you’re pressed for time, here’s just the recipe deets for ya!
First things first, you want to get your apples cored, peeled, and chopped. I really do not know any better way to do this than with an apple peeler/corer.
I got one for Christmas one year, and my life was immediately changed for the better. This thing cuts some serious time out of your baking prep…and who doesn’t love that?
Once your apples are all set and lookin’ pretty, it’s time to get crackin’ on the rest of your ingredients.
First, you want to mix together all of your dry ingredients and get them nice and acquainted.
Then, in another bowl, go ahead and whisk together your eggs, oil, and milk.
Then you want to add your wet ingredients in with your dry.
Next up? The star ingredients of this recipe!
Add your cranberries & chopped apples to the batter,
and mix until just incorporated. You don’t want to work out your batter too much!
Now it’s time to get cookin’! Spread your batter evenly into a 9×5 or 8×4 inch loaf pan sprayed thoroughly with non-stick cooking spray.
If you have lots of apples on hand like I often do, go ahead and make a double batch. It can’t hurt!
Before you know it, you’ll end up with the amazing aroma of fresh baked bread roaming through your kitchen, thanks to these fresh baked goodies.
Cranberry Apple Bread
(Makes one loaf, but can easily be doubled)

Ingredients:
- 1-1/2 cups all-purpose flour
- 3/4 cup sugar
- 1-1/2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 eggs
- 2 tablespoons canola oil
- 1/4 cup milk (cow or almond milk will work fine)
- 2 cups chopped peeled tart apples
- 1 cup fresh or frozen cranberries
- 1/2 cup chopped walnuts (optional)
Directions:
In a large bowl, combine the flour, sugar, baking powder, cinnamon, baking soda and salt.
In a small bowl, whisk eggs,oil, and milk. Stir into dry ingredients just until moistened (batter will be very thick).
Fold in apples, cranberries and walnuts, if using them. Transfer to an 8×4, 9×5, or mini loaf pan(s) coated with non-stick cooking spray.
Bake at 350° for 60-65 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely. ENJOY! :)

This looks awesome! Do you think this recipe would also work well for muffins? I am always in a hurry and I like to make things that are easy on the go so a muffin usually works best for me-let me know!
This year I’m planning on giving homemade crackers to my grandparents (they tasted those I made recently and loved them!) and chocolate covered pretzels for my boyfriend’s parents.
I don’t have much money for gifts this year and I think a homemade gift is really great to give! :)

My mom always made these for Christmas, they look really cute with some tea or cocoa in the middle, wrapped up in celophane with a pretty ribbon! (Warning: they’re not super healthy or anything but they’re a hit as gifts)
Glazed Nut Wreath
.25 c butter
.25 c corn syrup
1c sugar
4 cups mixed nuts
Melt everything but nuts together then add nuts and stir over med-high heat for 10-15min. Spoon first layer in a wreath shape onto greased foil, Then build up and after letting cool slightly make adjustments with the back of a spoon. After completely cooled take off foil and put on a pretty plate. Enjoy :)
I love to make this “Creative Mix” & put it in cute little bags for pretty much everyone I know–it makes a huge batch! I have to warn you, though, it’s highly addicting!
Ingredients for white covering:
3 lbs. almond bark
3 Tb. veg. oil
Ingredients for cereal mix:
12 cups Crispix or Corn Chex
1 14 oz. box peanut butter captain crunch cereal
16 oz. bag mini pretzels
4 cups peanuts
Directions:
White covering: Melt in glass container in microwave stirring every few minutes.
Mix dry ingredients while melting sauce in microwave. Pour white mix over dry ingredients and toss till well coated. I usually have to do it in at least 2 large bowls. Spread out over waxed paper to dry. When dry, break up and store in an air-tight container.

Holy cow that bread looks so good! I love giving handmade gifts. My favorite are snickerdoodle cupcakes from the Martha Stewart Cupcake recipe book.

I always make chocolate-dipped, sprinkle (or nut) covered pretzel sticks for my friends. I wrap them in plastic bags and add festive ribbons. They’ve always been a hit :)

Each year I make different gifts for people, normally it is either biscuits or chocolates. I get my ideas from Nigellas Christmas, it is a great cookbook. Maybe this year I will do your Cranberry Apple Bread.
