…that I just tried out a delicious new recipe? ;)

Actually, the title of this post has more to do with what you’ll find after today’s lunch + recipe, but we’ll get there soon.

I found a recipe the other day for a chilled cantaloupe soup, that was just screaming “summer” to me, so I decided to give it a try today.

First, cube up about 3 cups of cantaloupe.

Then, get the rest of your ingredients ready to add to the blender.

Puree all the ingredients until they’re all smooth, and you’ve got yourself some fruity soup. If you want, you can serve yours all “snazzy-fied” like I did in a wine glass. Hey, we’re classy over here. ;)

Chilled Cantaloupe Soup with Lime, Basil, & Mint

(Original recipe can be found here, courtesy of Soup Chick)

  • 3 cups cubed melon
  • 1/4 cup plain Greek yogurt
  • 1/8 tsp ground (powdered) ginger
  • Zest of one lime
  • Juice of 1/2 lime
  • 1 tsp agave nectar or honey
  • 2-3 mint leaves
  • 2-3 basil leaves (optional, but delicious)
  • A pinch of kosher salt
  • 2-3 Tbsp water if needed to thin the soup to desired consistency

Combine all ingredients except water in a blender, and puree until smooth. Adjust consistency with water, if needed. Serve chilled. ENJOY! :)

Before eating my soup, I shared the rest of the leftover Pulled BBQ Chicken with the hubby, who came home for lunch. :-D

Rather than eating it plain, I decided to open up a new bag of Food Should Taste Good Chips.

The flavor of the lime chips (which almost reminded of a margarita! :shock: ) with the BBQ chicken was actually quite an interesting, but totally delicious combo.

Probably one of my more random lunches, but it was all still tasty nonetheless. :)

So now, on to the real meaning behind the post title. A couple days ago, Nancy tagged me to do a “10 Random Facts” about myself, so after doing a little thinking, here are 10 that I found at least a little interesting. Hopefully you all think so too. ;)

1. I was a dancer for 18 years. I started when I was 3 years old, and did a combination of tap and jazz. I miss it all the time, and occasionally find myself “tapping away” in the kitchen while cooking or walking the aisles of the grocery store. Sometimes I think about going back; who knows? But I will always be a dancer at heart.

2. I hate snakes. I cannot look at them in books, on tv, and especially in person. I don’t have any horror stories of encountering one at any time, I just simply don’t like them. Luckily, I can handle other gross things like spiders, and have “saved the hubby” numerous times from them “trying to attack him”. ;)

3. I have a collection of Ernie dolls. I grew up with one Ernie doll and was completely in love with the orange guy my entire life. As he started to gain a little popularity and had more dolls made of himself, I started to accumulate them rapidly. I think I must have about a dozen or so different Ernie dolls, with “Tickle Me Ernie” and “Tumbling Ernie” definitely in the mix.

4. I was a semi-finalist twice in the Miss New York USA pageant. Yes, yes, I dabbled in the pageant thing. For me, it was more for the fun and experience of it, rather than winning. Actually, when I made it to the semi-finalist round, I got wicked nervous because I didn’t really want to win! I was surrounded by girls who had been training to do this kind of thing their entire lives, and totally could just not relate to that. So yes, it was fun, but definitely a thing of the past.

5. I married the love of my life. But you already know that by now. ;) I met him at 15 and he stole my heart.

6. I’ve been on TV. I’ve appeared in two local TV commercials in the past few years: one was for the CW channel, and one was to promote a local gym (which is actually the gym I’m now a member at – who knew!)

7. I’ve never broken a bone. The worst damage I ever did was sprain my wrist while sleigh riding when I was little. Other than that, no casts have ever been on my bones! (Don’t worry, I’ve already knocked on wood numerous times.)

8. I won a local contest to be on America’s Next Top Model. After being encouraged by many of my friends, I drove out last minute to the casting call, waited in line for 3 hours, tried out, and figured that’d be the end of it. A few weeks later, I got a call saying that I won the local contest and was going to be given the opportunity to meet the casting directors personally in NYC. I never heard back after that (which is fine, because the gals on that show are CRAZY!) but if nothing else, I got a free trip to NYC and had a fun weekend with my mom. :)

9. I live in a house that my grandfather built. The house Jay and I currently live in was built by my grandfather and great uncle back in the 1960s. It was the house I grew up coming to, to “sleep over

    Oh my gosh, cantaloupe soup! I am bookmarking this one. :) I actually have a TON of watermelon... maybe I could try that variation. Hmm, random facts... I finished undergrad and my MBA in 4 years. And I swam competitively from age 4 to 22, and now have a lifetime 'souvenir' of broad swimmer shoulders. :)

    When I was in middle/high school, I was mesmerized by George Clooney. For some reason I didn't like the teeny-boppers but I loved George. To the point of cutting out People magazine articles that were about him and even getting a book for Christmas one year...so embarassing looking back.

    Ohh that soup sounds so interesting. And it looks beautiful...very profesh :) My fun fact: I'm a triplet! That's always my go-to answer because I can never think of anything else! My sis lives with me in NYC and my brother is in Ohio. I love being one of three!

    This is my first time commenting and I just wanted to say how much I love your blog! You promote such a healthy/honest lifestyle and it's so refreshing to find a blog like that to read. I love the facts! A random fact about me...I can grab my shoulder blades behind me and make the 3-leaf clover shape with my tongue!
