Meal times at our house lately have been nothing short of…interesting.
With a newborn in the house (who is still on a fairly unpredictable schedule), we really never know how dinner is going to pan out. Some nights we eat early. Other nights we eat later. Some nights Jay and I are both doing all we can to calm the chaos with a baby who loooooves being held and a toddler who needs our attention now, now, now.
And other nights, I have a quiet, sleeping baby next to me as I get dinner ready. He even cheers me on…how ‘bout that?
Don’t get me wrong; in the newborn stage, we’ve had a LOT of easy dinners. Takeout, sandwiches, cereal, freezer meals…we’ve done it all. But I’ve also still really enjoyed getting our Blue Apron deliveries and taking the time to prepare and enjoy them!
We’ve had two Blue Apron deliveries over the past few weeks (one provided to us for free, one paid for with our own money), and it’s definitely been nice to have some different types of meals on the menu that are fresh, flavorful, and full of high quality ingredients. Not to mention, it makes grocery shopping (which I’ve been avoiding until absolutely necessary these days) that much easier.
When it works out, I try to take some time to prep anything I can ahead of time during kiddo naps or when they’re quiet. Of course, it doesn’t always work out like that and I wind up with a toddler at my feet.

It’s no secret by now, I’m sure; we’ve been loving Blue Apron for quite some time now. The 2-Person Plan works best for us (they also have the Family Plan), and many times, the meals are large enough for us to be able to get a third serving of. Like these Enchiladas Suizas with Summer Squash, Poblano Pepper & Creamy Salsa Verde. I absolutely LOVED them!
And this Cavatappi Pasta & Arugula Pesto with Summer Squash & Ricotta Salata (also totally delicious) was enough for almost three full servings, too.
They’re always adding new dishes to their menu every week, and the variety of cuisines they offer is totally impressive. They have a huge selection of recipes, too, which we’ve gone back and referenced a few times for some of our favorites.
Another reason I’ve been a fan of Blue Apron for so long is because the meals are all easy enough for Jay to prepare, too, thanks to the detailed recipe cards.
So for the evenings when I’m stuck like this…
He can be out in the kitchen taking care of business.
Gotta love a man who can cook, right?
Oh, and as a side note? I think our favorite meal from the past two weeks of meals we recently got were these Fried Green Tomato Sandwiches with Aioli & Potato Salad.
The potato salad was ridiculously easy to make, and the sandwiches were just awesome.
Jay was convinced he wouldn’t like them (he’s not big on tomatoes), but WOW. They were a total winner for both of us! And were enjoyed with a sleeping baby on the table with us.
We so fancy.

my roommate sometimes does BA and it’s a cool concept…i just get home so late on weekdays that it’d be hard for me! but some of the stuff does look so good.

I want to try Blue Apron so badly but my husband and I both are cutting calories in an attempt to lose weight and the calories per serving are sometimes double our allotment. Have you heard if there are any plans to make lower calorie versions? I love the look of the enchiladas for instance but 740 calories per serving is just too high for us at this time. Boo for dieting!

Aww man! I haven’t heard anything about that. But since you can choose which meals you get and what weeks you get deliveries, maybe you could try to look ahead and choose based on calorie counts? Just a thought!
