Oh man, what a great weekend! Where do I even begin?!
Well, we’ll start off with Friday night, which included a double date night out with our cousin/friends Brian and Mal. Oh, how we love them!!
We met up with them at The Van Dyck Lounge in Schenectady, which we’ve only been to a couple of other times, but we’ve always loved it.
To start, we got the trio of dips to share, including a buffalo chicken, spinach and artichoke, and a crab dip, all with homemade tortilla chips.
Ugh, they were SO good, but my favorite was the spinach artichoke.
For dinner, I went with their Bourbon Turkey Panini, which was paired with some pretty delicious french fries.
Unfortunately, as I already mentioned in yesterday’s post, I had a major fail of leaving my box of leftovers on the table and not realizing it until we were about 10 minutes into our drive home. Such a bummer.
But one thing that was anything BUT a bummer was the delicious dessert that Jay and I shared that night…
It was some sort of vanilla caramel crunch cake, and ohmygoditwassoooogood.
Delicious food and fabulous company made for a great night out!
Saturday was busy busy busy from the time we got up until the time we went to bed. Jay spent a lot of the day working in the basement, so Lucas and I took care of some of our own things…including a trip to BJ’s for some essentials.
And, man, when you need all of the essentials at the same time, it really adds up. Yikes!
Speaking of a yikes…how about a look at our garage? Yeah, one of the things on my agenda for Saturday was to try to clean/re-arrange the garage (we desperately need a shed…!)
But since Lucas didn’t take a nap, it made things a bit difficult. Instead, we found ourselves running up and down the road and enjoying the 60 degrees of sunshine.
Which, hey, I’m certainly not complaining about. Mother Nature, you are knocking it out of the park right now!
By the time we put Lucas to bed, I was totally wiped from the day (I honestly think I sat down maybe twice all day??), but I had a stronnnnngggg craving for fro yo. So before I got too comfy on the couch, I went out to 16 Handles and brought some back for Jay and myself.
And yes, I did debate on asking him to go do it for me, but there’s only one person I trust to get my ratio of fro yo to toppings right…and that’s me. Ya know what I mean?
Sunday was another busy day, but not quite as much going on as Saturday. Lucas and I took care of the grocery shopping Sunday morning while Jay went out to get some chalk paint for a new project. Thankfully, Lucas took a nap on Sunday which allowed for me to get some dinner ready for our guests!
I think this was the first time we’ve had my parents, brother, and his girlfriend Carissa over to the house for dinner since we’ve moved in…crazy! But we all had such an awesome evening, filled with lots of laughs.
For dinner, we had our favorite BBQ Pulled Chicken
Scalloped potatoes, and salad.

Of course, Sunday dinner (or, let’s be real…any dinner) wouldn’t be complete without dessert, right?!
My parents brought over some cheesecake to share, while I made a batch of my favorite chocolate chip cookie bars.
So no, I never got around to making cupcakes this weekend, but I did make cookie bars, and that’s still winning in my book.
Lucas thoroughly enjoyed them, and even managed to sneak an extra one thanks to Papa’s help, too.
It was definitely a fun evening and a great way to end an already fantastic weekend. I’m super bummed to already be back at Monday, but I suppose we might as well all make the best of it, right?!

The weather here in PA was in the 60s this weekend. I was cheesing’ from ear to ear and definitely spent a lot of time outside. Gosh, I cannot wait until spring/summer :)

Yum to this whole post! All the desserts! I love that you had to get your fro yo yourself. I am also this way. My hubby isn’t a fro yo fan so I would not trust him to get my appropriate portions of yo to topping either ;)

Lol, I love this also about the froyo!. It makes me think of most things we women have to do – want it done right, do it yourself. Haha. ;) It needs to be a meme – someone get on that.

Haha, we actually went to bed last night saying that we barely saw each other all weekend! While it is nice to get things checked off the to do list, we definitely do wind up sacrificing together time!

What the heck is it about dips?! I love them, and the trio you guys ordered looks so dang good. We lived in Dallas, TX for awhile and found our favorite hang spot and they had THE BEST queso, I’m still on a mission to find queso as good as that……sigh

It was good, but probably could have cooked an extra 10 minutes or so since the potatoes weren’t super soft.
