I’m such a sucker for fall-related food and candy items. :oops: While grocery shopping a couple weeks ago, I came across this festive Betty Crocker box…
and didn’t even think twice about tossing it into my cart! I had a feeling it would come in quite handy for this past weekend’s Fall Festival festivities, and it sure didn’t disappoint. Since cookies are often easier to “grab and eat” than cupcakes are, I decided to use my quick & easy Cake Mix Cookies recipe:
Cake Mix Cookies:
1 box of your favorite cake mix
1/4 cup oil
1/4 water
1 egg
Mix all ingredients together. Drop by spoonfuls on a baking sheet about 2 inches apart. Bake in a 350 degree oven for 10-12 minutes.
Since part of what really drew me in to the picture of the cake was the orange frosting, I decided that it would be a necessity on my cookies. After looking through my cookbook binder, I came across a recipe that I had completely forgotten about, yet is super delicious!
I don’t even know where the recipe came from…it’s just on a random piece of paper that looks like I printed out at some point? Either way, it doesn’t matter where it came from. All that matters is that it’s extremely yummy.
Orange Cream Cheese Frosting
Ingredients:
- 8 oz. package cream cheese, softened (you can also use 1/3 less fat)
- 1/4 cup butter, softened
- 1 tbsp fresh orange juice
- 1 tsp grated orange zest
- 1/2 tsp vanilla extract
- 4 cups confectioners sugar
- 1/4 tsp orange food coloring
Directions:
Blend the cream cheese, butter, orange juice, orange zest, and vanilla in a large bowl, using an electric mixer set at medium speed, until smooth. Add the sugar and continue to beat until light and creamy, about 3 more minutes. Add the food coloring and gently stir until the color is uniform. Chill the frosting until read to spread.

I think it’s important to make sure that you add the orange food coloring, just so people may have an idea that it’s actually orange flavored. The orange flavor is subtle, not too overpowering, but a great complement to the creamy, cream cheese base.

This frosting actually pairs really well with anything chocolate. I had originally used this recipe with both chocolate cupcakes and brownies, and I actually think I like the frosting better with those. While it was great (and festive) on the funfetti cookies, the sweetness of the orange frosting was missing the richness of something chocolaty. And when do we ever need an excuse to eat anything chocolaty? ;)
