1. I’ve been sitting in front of this blank screen for at least 10 minutes now, not quite sure what I feel like chatting about for today’s post.
2. I probably would have skipped posting all together for today, but since my due date is drawing nearer and nearer, I figured I would reassure all of you that no, I am not yet in labor. Still here, waddling around.
3. I shared so much of my day with you guys yesterday, that I wound up leaving myself with basically nothing new to share (picture-wise) from my phone for this week. Whoops.
4. I had a bit of a freak out moment going to bed the other night. I started thinking about how my due date is literally less than 3 weeks away and, despite the fact that we’ve been “getting some things ready” for these past few months, I feel like we still have so much to do! Getting car seat bases into cars, packing hospital bags, figuring out a plan for Lucas. Time has seriously snuck up on me BIG TIME with this one! So I’m devoting plenty of time to trying to feel a bit more prepared this weekend.
5. Another thing that kept me up the other night? Thinking about how bare my freezer is and how I should really put together some freezer meals for when the babe arrives. So I’m calling on all of you (no, not to make me freezer meals…however, I’ll gladly take them) to share some of your favorite freezer-friendly meals. I’m hoping to make a list for the grocery store this weekend so I can try to at least get a few easy ones thrown together. Okay? Ready, go.
6. I came across this blog post just a little while ago, and it is totally worth a read. So. much. truth.
7. Another 10 minutes just went by because I started scrolling mindlessly through Facebook again. I’m totally not on my blogging game today.
8. And now all I can think about is chocolate covered pretzels, so I think the writing Gods are telling me that I should probably just call it quits for today. Maybe next week I’ll shake this writer’s block!

I made your chicken and biscuit casserole base a few months ago and added a little extra of everything (to help absorb the liquid a bit more) to make enough to fill 2 pies crusts for chicken pot pie, ate one and the cooked the other and froze, reheated perfectly just a few days ago!!

What also helped me was prepping and freezing some things I could just thaw and throw into the slow cooker/oven. Freezing things like chicken drumsticks/thighs/breasts in a gallon Ziplock in the marinade (Italian Lemon, BBQ, etc) And then having it all set to cook.
I’m sure you don’t need to be told this as a full time working mama, but especially now with a newborn coming I hope you give yourself some grace and extra help! I did some freezer meals but also stocked up on Trader Joes frozen meals and other convenience frozen/pantry foods. Also, paper plates for the win at first. No shame in that game. :) I didn’t live near family or friends, but if anyone offers anything to you, I would ask for delivery or takeout gift cards. Honestly, food is one of the hardest things to try and think about at first so good luck. You have tons of family and friends to help and you will be just fine.

Here’s the BEST Mac n Cheese recipe that makes a perfect freezer meal! I had it made for me when I was pregnant and now I make it for all my pregnant friends :) Enjoy!
Classic Baked Mac n Cheese
16 oz. macaroni pasta
3 c. whole milk
2 c. heavy cream
1 t. salt
1 T. cornstarch
1 T. flour
1/4 c. cold water
24 oz. sharp cheddar cheese, shredded
4 T. butter, melted
1 c. bread crumbs
In large pot, bring 6 qts salted water to a boil. Add pasta and cook according to directions. Drain, rinse, set aside.
Preheat oven to 350 degrees. Grease 13×9 baking dish. In large saucepan over medium/high heat, bring milk and cream to a gentle boil. Add salt + dash of pepper. Mix cornstarch, flour and water together in a small bowl. Whisk into milk mixture and continue cooking until slightly thickened. Whisk in cheese. Place cooked pasta in baking dish and pour cheese sauce over pasta. Combine melted butter + breadcrumbs. Sprinkle over pasta. Cover with foil and place in oven (or freezer!). Bake for 50 min.. Uncover foil and return to oven for additional 20 min. or until breadcrumbs become golden brown.

No need to apologize for a “lame post”! It happens to everyone and just shows you’re human :) And as far as freezer meals go, my favorite thing is to cook up a bunch of taco meat and slow-cook shredded chicken or pork with barbeque sauce and freeze them in meal–sized batches. It’s easy and versatile. You can get salads, sandwiches, wraps, and loaded potatoes out of them for lunches or dinners! Baked spaghetti (like your spaghetti pie) also freeze well!

Getting things ready, making freezer meals…sounds like you are nesting big time! My birth class teacher told us that’s a huge sign labor is imminent, so good luck mama! :-)

I stocked my freezer before my second baby, and I am SO glad I did. Here’s what I remember having in there: banana bread, pumpkin muffins, waffles (for my toddler), Crock Pot meals from Skinnytaste (Santa Fe chicken is a good one), sausages/kielbasa, chicken pot pie, playgroup granola bars, meatballs, and lots of marinated chicken and pork. Having a summer baby is awesome because grilling is so easy (because my husband mans it), and I just threw together a quick side.
