Got the Bejesus Scared Outta Me

By Courtney 28 Comments

This afternoon, I had the bejesus scared outta me!!

Typically, Jay and I keep the door to our bedroom closed, in an attempt to keep any extra Cody fur out of the room. It helps a lot with my whole allergies & asthma situation.

Occasionally, however, we’ll open the door for a bit to let the fresh air circulate; and since today was a beautiful day, I had the windows opened and decided I’d let the airflow do its thing.

Well, as I was walking back into our bedroom with a hamper full of laundry, I happened to look down, only to see a sneaky set of eyes fixated on me…

IMG_2069

I don’t know why it scared me so bad, but my goodness he is sneaky!

What a little CREEPER! Surprised smile

Tonight’s dinner was somewhat of a random assortment. I was really craving a nice, baked sweet potato, so I started with that and just went from there.

IMG_2072

To get some greens, I actually heated up a box of frozen green beans & almonds. Sometimes, frozen, steam-fresh veggies are great! I had about 3/4 of the package. Smile

IMG_2073

Then I wanted some extra source of protein, so I decided to toast up another slice of my Nature’s Pride Hearty Wheat with Flax bread and topped it with some peanut butter.

IMG_2074

And, of course, the star of tonight’s show! I can’t even tell you when the last time was that I had a baked sweet potato. 95% of the time, sweet potatoes are consumed as fries and that’s how I want ‘em.

IMG_2075

But tonight’s sweet ‘tater totally hit the spot. I sprayed the outside with some butter spray, sprinkled some S&P, poked it with a fork a few times, and baked it in the oven at 350 degrees for one hour. It was so nice and soft that I didn’t even need a knife to cut through it!

IMG_2078

Of course, the toppings didn’t hurt either. I generous dollop of nonfat Greek yogurt, a sprinkle of brown sugar and cinnamon, and a drizzle of maple syrup made this a potato to remember. Smile

Ahhh - Cody is a total creeper! I love the picture of him with just his head popping out from underneath the bed. Love it. Sweet potato fries are the way to go - I also like sweet potato & black bean chili. Have fun bowling tonight, Courtney!

Great minds must think alike--I did a Twice Baked Sweet Potato tonight! :) I love fries, but this twice baker gives them a run for their money! Cody is too cute. And I'm not a cat person, so that says a lot coming from me! If I could guarantee he'd be as cute as Cody, I'd consider getting a kitty for myself!

Congrats Gabriela! That's so exciting! My favorite way to eat sweet potatoes is the way my mom makes them for Thanksgiving. Instead of the traditional sweet potato casserole, this one has a topping of brown sugar, coconut and pecans. It is addicting! What's even better is mixing the left over sweet potato casserole with Irish potatoes to get mixed mashed potatoes (white and sweet). SO good!

I smiled at the Cody pics! My cat, Chloe, loves to hide and reach her arm out to grab one of the dogs when they walk by. She's sneaky! Your dinner looks delish! I am craving a sweet potato now. :)

I like to cube them up and roast them...like a sweet potato hash! And the ones that get a little extra burned are the best!

Such a funny post. I'm studying Organic Chem tonight and whenever I need a laugh, I come back to this post and look at your crazy cat. It's something my cats would do and it makes me instantly happy.

LOLOL omg Cody is too cute. I die... I'm surprised that Cody always stays still for your photos, since my pictures of my cat always end up being a blur of fur. I love baking sweet taters, but microwaving is definitely the most convenient.
