Today has been a much-needed, lazy day in the Horan household. :)
Last night, Jay and I had a Halloween party to attend…you like our costumes??
We actually recycled these costumes from last year, when we went as some of the “Average Joe’s” from the movie Dodgeball. Last year, we were a foursome with our friends Joe & Kate…
but this year, Jay and I had to go as a twosome. We really didn’t feel like spending any more money on costumes, and when it comes to Halloween, I’m ALL about comfort. Case in point:

So anyways, last night’s party was a blast! I can’t say I’m really surprised…whenever we get together with my favorite college crew, it’s always a party! :-D
Eileen decided to go as a cat burglar, since she’s always been kind of obsessed with cats. ;) Too bad she wasn’t very good at keeping an eye on her loot!

There was definitely enough food to go ‘round…I lost track of what entered my belly. Probably better off…I don’t really want to know how much of that I consumed. :oops:

It was a great party, but I’m definitely feelin’ a little tired today. ;)
After spending a few hours lounging on the couch, catching up on school work, and watching our DVR’d Jersey Shore finale (which I was kind of disappointed with?), it was time to make some dinner.
A few weeks back, I won a contest through the Foodie Blogroll for some free grass-fed flank steaks. I was stoked…who doesn’t love winning free stuff?? :-D
The steaks came from Hearst Ranch, which sells only humane-certified, sustainably-farmed, no-artificial hormone/no-antibiotic meats. That made me happy.
When it comes to eating red meat in this house, I have one stipulation: I will eat it, but I won’t cook it. I just never felt comfortable cooking steaks, but it doesn’t mean I won’t eat them. So whenever hubby feels like taking the reigns, then I’ll go with it.
Earlier today, he marinated the meat with a recipe that he said he found online. It was able to sit for about 5 hours, so it had a good amount of time to soak in the flavors before grilling. If you like soy sauce, then you’d definitely like this marinade. We both decided it was good, but I don’t know if we’d use it again…
Flank Steak Marinade
- 1/4 cup soy sauce
- 2 tbsp water
- 3 clove
s garlic, thinly sliced - 1 tbsp brown sugar
- 1 tbsp oil
- 1/2 tsp ground ginger
- 1/2 tsp pepper
Combine all ingredients, mix well. Add to steak, cover, and refrigerate, turning occasionally.
While hubby took care of the grill, I got to work on sautéing some peppers and onions.
After having our steak, peppers & onions ready to go, it was time to start prepping the final products: quesadilla for him, steak wrap for her.
Using some LaTortilla Factory wraps, I started by melting some mexican cheese in Jay’s quesadilla. Once the initial layer was melted, I added in the peppers & onions, steak, and a little more cheese. Then, all you gotta do is fold it over, press, and hold for about a minute. Flip it once, then you’re done!
To make my wrap, I first started by adding my peppers & onions, followed by a few strips of steak,
Next I added in some President Herbed Fat Free Feta crumbles.
Then I got really crazy and added a tiny drizzle of reduced-fat Ranch dressing.

Jay let me try a couple bites of his quesadilla…definitely delicious!
But not quite as delicious as my wrap was! We both decided that the combo of feta + ranch dressing was perfect.
On the side, I enjoyed some roasted veggies. Actually, they were more like slightly charred veggies, but I like ‘em that way. ;)
Lucky for us, we already have some dessert in mind for this evening. But I think somebody else has them in mind too…

I’m thinking that some of these dunked in my Mom’s homemade applesauce will be the perfect way to end my Sunday!

Halloween is one of my favorite holidays. This year I decided to go all out with one of the Lady Gaga costumes. Should be interesting!

It looks like you had a blast, I LOVE the Dodgeball costumes! I don’t mind Halloween, sometimes I more into it than other years. This year, I’m indifferent. I have a couple costumes in mind, it depends on how many appearances I need to make. I have Audrey Hepburn and a Boxer on the backburner.
