Ohhh, Monday. I’m so not ready for you yet!
But here we are, so might as well embrace it, right? Hey, at least we have a pretty good weekend to look back on!
It was one of those weekends where you felt like you were just on the go go go, but not much to show for it…does that make sense? Anyways, here are a few highlights via pics I took over the weekend…
Starting Monday with a delicious ham, egg, and provolone sandwich, courtesy of Jay, which was enjoyed while making lists and clipping coupons to BJ’s.
That was a planned trip that, unfortunately, never happened. Ahh well…gotta be soon because we’re lowww on peanut butter!
I also took care of taking down all of the Halloween decorations around the house, and I’d be lying if I said I wasn’t tempted to start Christmas decorating already.
But don’t worry, I did not. That doesn’t happen until the weekend after Thanksgiving, as always.
Saturday morning, I sort of felt like I was winning at parenthood. Lucas slept all night and until just after 7am in his big boy bed (no rocking chair!), and he even ate most of the food that I was putting in front of him. Including fresh produce, which seems to be more of a miss than hit these days.
But then nap time rolled around and I was knocked back down to reality since, ya know, we’re too cool for naps over here right now.
Jay wound up going to TOWN on our kitchen table and he actually now has it just about finished. It’s amazing and I cannot WAIT to use it!! Just needs a little more sanding, some stain and paint, and then we should be good to go.
I’ll be sure to share the final product once it’s all done.
The weekend also included not one, but TWO awesome workouts. I can’t tell you the last time that happened on a weekend, and it felt so good.
A little PiYo, a little Barre, and some 10lb Slimdown Total Body were the name of the game.
Oh okay, let’s talk about this snack real quick because it is my jammmmm right now. Almond Nut-Thins paired with a wedge of The Laughing Cow white cheddar cheese and topped with some strawberry jelly. Whewwww, is that one good. Promise me you’ll try it?!
I also found myself with a little free time after dropping Lucas off to visit with my parents for a couple of hours. So rather than just hit up the grocery store down the street, I took advantage of the moment and hit up Trader Joe’s.
Samples, guacamole, chips, BBQ chicken pizza…it was all so so so worth the trip!
Sunday morning included homemade coffee cake and I can take zero credit for this one. I’ll tell ya…my husband is killing it in the kitchen lately!
In case you’re curious, he used this recipe, and I’d highly recommend it. Amazing!
Also amazing was this salad I put together on Sunday. Lettuce, tomatoes, carrots, TJ’s roasted chicken, feta cheese, avocado, and balsamic vinaigrette dressing.
I thought I was going to get a chance to eat this solo but, alas, someone else had other plans and thought he was real funny.
No nap once again. It’s a good thing he’s cute.
The final pic I have to share from this weekend is the totally delicious dinner we made Sunday night. Grilled steak quesadillas (loosely based off this recipe) with a random side of sugar snap peas and some avocado.
I mean, the peas probably don’t go with quesadillas, but it was the first thing I grabbed and I figured we should probably have some extra veggies with all that cheese.

I attended a course this weekend, so by the time Monday rolled around I definitely felt like I missed out on the weekend! But the super sunny 70 degree weather in November certainly made breaks incredibly joyful :) Happy Monday!
You know it’s a good weekend when TJs and workouts are involved! I had a date night with my husband and finally made it to yoga! I can’t wait to see your table!
William is the worst napper for me, but sleeps great for others! Stinker toddlers!

PiYo is such a good workout! I feel ya on the naps. Sometimes my little guy just will not stand for it! Oh the fun of parenting! :)
Love sugar snap peas! One of my favourite sides! Healthy “fries” :) Can’t believe Jay made that cake!!! He’s obviously been learning from you on the sidelines!
I used to do Ritz crackers with cream cheese and jam back in the day! It was one of my favorite after school snacks so I can only imagine how delicious that must be!

My weekend was low key and not very productive unfortunately. Today was much better and I got the week started off right!
