I Love Sweet Potato Fries

By Courtney 11 Comments

Howdy folks!  Gotta try to make this post a quick one (HA) – I’m off to a softball game in a few minutes!

Dinner tonight was super delish, thanks to one of my fave side dishes: Sweet Potato Fries!! :-P

I just toss ’em in a little bit of garlic oil, sprinkle some garlic powder, salt & pepper, and pop ’em in the oven (400 degrees) for about 30 minutes, rotating once halfway through. They always put a smile on my face. Seriously, I think I could eat them every day. They’re just incredible. :)

Along with the sweet taters, the hubby and I cooked up some chicken sausages that we’ve (obviously) had in the freezer for a little while. The sweet Italian style is probably my favorite from al fresco, but ALL of their varieties have always been tasty!

I’ve actually been waiting to have something like the chicken sausages so I could try out this new find:
Arnold Sandwich Thins, Fill ‘Ems – how cool are they?!? Perfect for hot dogs or, of course, chicken sausages. :)

I also roasted up a little broccoli, which I simply tossed in a teeny bit of EVOO, S&P.

My scrumptious plate – we also sauteed up some peppers and onions to go along with the sausage, because really – how can you have any kind of sausage without peppers and onions??? ;)

Jay says I “ruined it” by adding the ketchup. I say whatever, I love ketchup!

Alrighty folks, we’re off to the softball fields!

Have a great evening, whatever you may be doing. :)

I’m so excited to put together all of your responses from the Fashion Friday poll!  You guys had some good answers, so make sure to check out the results tomorrow! ;)

LOL - I'm making sweet potato "fries" right now! I could eat them every single day. And I MUST find those "buns". I love the Arnold sandwich rounds. These will be fantastic for a few things we make in our household.
