What I’m Eating on Repeat

By Courtney 54 Comments

I noticed the other day, as I was packing up some of my food to bring to work, that I’ve been on a bit of a “repeat” mode when it comes to a lot of what I’m eating these days.

As you guys know, I don’t document all of my food anywhere near the way I used to back in the day. I don’t miss blogging like that, honestly (it was time consuming AND just exhausting sometimes!), but I do miss getting the chance to share some of the things I’m eating and loving.

So today I thought, why not do just that?! Here’s a look at what I’ve been eating on repeat these past few days/weeks/months…

Justin’s Vanilla Almond Butter

justin's vanilla almond butter

I buy mine at iHerb (seriously, love that site) and it’s just so. darn. good. I mean, the stuff is good on anything, but lately I’ve been loving it with bananas, or spread on graham crackers with some mini chocolate chips sprinkled on top for an after dinner snack/ dessert.

Annie’s Bunny Grahams

annie's bunny grahams

I originally “bought these for Lucas,” but let’s be real…

IMG_9238

They’re totally for his mama.

Sweet Potatoes

chicken sweet potatoes and brussels sprouts

I recently bought a bag of mini sweet potatoes for something like, $2.00, at Price Chopper and we’ve been working our way though them since. Sometimes I go through phases where I sort of forget about just how GOOD and versatile those things are. I love them with meals but they also make a fabulous snack (go the savory route with some black beans and salsa, or a little sweeter with some peanut butter and honey!).

Banana Oatmeal Chocolate Chip Cookies

Oatmeal Banana Chocolate Chip Cookies

I knew it was going to be dangerous making these cookies over the weekend, and so far, I’ve been right. I’ve been averaging about 2-3 per day since they’ve been made…they’re just too easy to grab right from the freezer! I guess it’s a good thing they’re really not that bad for ya.

Crockpot Steel Cut Oatmeal

Crockpot Steel Cut Oatmeal

But I guess that goes without saying. Winking smile With the way my current obsession is going, I foresee this being made every week! Has anyone else given it a shot yet?

Cara Cara Oranges

cara cara oranges

If there ever was a variety of fruit that really stood out from all the rest (at least for me), I’d absolutely have to say it’s the cara cara orange. These things are just so sweet and juicy, and absolutely perfect this time of year. I’ve been buying a bag of them each week and we usually have no problem working our way through it.

Salads for Lunches

salad

Surprisingly enough, I’m still on a salad kick for lunch. I’ve been prepping them on the weekends (making them for both Jay and myself), which makes it super easy to pack up during the week. I just add a couple extra toppings (lately, it’s grilled chicken tenders, avocado, and goat cheese), pack my dressing (and occasionally croutons) on the side, and I’m good to go!

Yogurt for Dessert

yogurt dessert

As much as it pains me to say it, I really just can’t be eating a huge bowl of ice cream every night. We were getting to the point where a 1/2 gallon of ice cream would last 3 days in our house, and it was just too much. So to replace my ice cream, I’ve been devouring these little makeshift desserts which typically start with a vanilla or plain yogurt (liquid stevia added if it’s plain), a tablespoon of PB2, a sleeve of a graham cracker, and lots of mini chocolate chips. It satisfies the sweet tooth and has a little extra staying power, too. Deeeee-lish.

Starbucks Coffee

starbucks

I’ve reignited a habit that had been tamed down for a bit…but lately, I just can’t get enough of my favorite Starbucks coffee order (grande blonde roast, 1 pump caramel, 1/2 pump white mocha, nonfat milk). They’re owning me…but I’m earning my free drink rewards, so that’s gotta count for something, right?

Fruit & “Stuff” in my Water

lemon cucumber mint water

I’ve said this before, but I almost always end up drinking so much more water during the day when I have fruit or other things in it. For the past few days, I’ve been all about the lemon-cucumber-mint combo, and it’s rocking my world. I’m sure it’s a combo of the add-ins, plus just the extra water consumption in general, but I’m feeling great. Plus, more water = more trips to the bathroom, which = more steps taken in a day. Win-win!

So how about you guys? What have you been eating (or drinking) on repeat these days?

I've been on a huge sweet potato kick recently too. My favorite way to serve them? Sprinkled with some spices such as cumin and chili powder and roasted for 25ish minutes in the oven. I love the idea of having them for a snack, too! I drink SO much more water if it's got a little flavor in it. I'm definitely with you on that one. Let's see, I've been eating oats, bagels, and trail mix on repeat lately. Hey, if it "ain't broke, don't fix it!"

Yeah I frequently "buy things for my husband" that never make it past his lips. Those bunny grahams are the bomb though.

Sweet potatoes are in full rotation along with hard boiled eggs and grapefruit. Loving all of the fresh citrus! I am not looking forward to all of the kiddo foods coming into the house soon- just more for me to snack on. One for you, one for me ;)

I am loving the Cinnamon Raisin Pb&Co peanut butter. It is so, so good with oatmeal + apples! I used to make steel cut oatmeal in college but forgot about it because it took so long to prepare.

I do plain Greek yogurt with frozen berries and melted raw honey (which I suppose makes it not raw anymore but I prefer the thick, real honey anyway, just easier to drizzle if I heat it up a few seconds)

That Justin's Vanilla Almond Butter is my faaaaavorite stuff ever. I rarely buy it because it's so pricey, and I have little to no self control around it, but it's a nice treat every once in awhile. My favorite is just a big ol' spoonful of it! I can't wait to get home and try out your version of Crock Pot Steel Cut Oats. Hunter and I will both benefit from it, and it doesn't seem like it could get much easier! I've been drinking lemonade on repeat lately...it just tastes so refreshing and yummy!

I think that i have been eating on repeat for far too long. I'm a creature of habit but with some flexibility--more so that I am aiming for certain types of things at the same time each day. But I am getting a bit bored with my choices of late. That's why it has been so good to go out of town for a bit and have all of that thrown out of whack. Except now I would really like to go home and have a bit of a simpler meal-day, thank you!

That Almond Butter is one of the best - and a repeat iHerb purchase for me too! Lately, a few of my repeat eats have been what we like to call "protein nice-cream" - cottage cheese blended up with frozen fruit and peanut flour (or minus the peanut flour for a non-PB flavoured version), heaps of greek yogurt, crunchy apples, earth balance peanut coconut spread and salad or ham wraps with swiss cheese. I seriously have a dairy thing going on at the moment, it seems haha.

I tend to eat the same things and I don't know why...I don't normally get sick of it like most people. I have been adding some versatility with my complex CHO options...my latest most favorite has been sweet potatoes. I shave them using a grater (because it is just so easy) and sautee them in coconut oil with granulated garlic. I have to watch because I will eat well past my necessary CHO intake if not! They are like dessert! YUM!
