I can remember when I was a little girl, I would get so excited when I knew I was getting picked up from school early. Usually for an appointment to the doctor/dentist/orthodontist (oh how we all loved those trips, right?), but just the same, it was such a treat to be OUT. To me, it was always such a thrill to be out and about during the day when I knew that all the other kids were still back at school. You could see what all the “other people” (aka, adults) did during their day.
Well, today, I’m feeling the same way. :) I must say, it’s nice to be “out” every once in a while during the day. Working in a school, you don’t really get the luxury to leave for lunch, or run a quick errand in the afternoon. Today, as I was out running my errands and whatnot, it almost brought me back to that feeling of being a kid again, out in the “adult world”. It kinda left me a little giddy! ;)
BUT, not as giddy as I am right now with this fantastic lunch!
Last night’s dinner was so delicious, I knew I would have to have some again for lunch. Today, however, I decided to bulk up my veggies even more by adding some of my roasted veggies!
One bite into my “souped up” veggie soup ( ;) ) I was in heaven. I swear, the soup is 10 times better today, not only because I added the extra veggies, but the flavors have all meddled together so nicely. It’s full-o-flava’! :-D
And, of course, my soup would not be complete without a piece of my Hearty Oat Loaf. I popped it in the micro for about 15 seconds to get warm, then topped it again with a little honey butter.
Don’t be surprised if I end up going back for a second piece! ;)
Being home today also let me see how Cody likes to spend his days while we’re at work. Take a look at this piece of work! Is he not comfortable, or what? I’m tellin’ you, he gets himself into the wackiest positions when he sleeps! :)
I have a NEW recipe that I’m trying out for dinner tonight that I’m super excited about! I’ll be back to tell you guys the (hopefully) good results! :)
Question For You!…
What “chilled” soup recipes have you tried that were a success?

Our cat lays the same way, (so silly). Belly hanging out and all! Another crazy fact is that hubby and I have the same couch.
