Hello and happy Thursday to youuuuu!
I’m so pumped that this week really seems to be flying by, which is great. I took tomorrow off from work to do a little Christmas shopping with my mom and then I also took Monday off for my day of cookie baking (gotta use up those vacation days before the end of the year!). So today is my Friday AND I’ve got a nice, 4-day weekend ahead of me. Woop!
First, thank you for all of your comments on yesterday’s post. Seriously. I’ve had that post topic on my editorial calendar for about two months and decided to just write it out and see where it brought me. I truly appreciated all of your support AND your friendly discussion!
As for the week so far? It going well! Wednesdays are my day to work from home, so I was able to take advantage and mix it up on the breakfast front a bit. Scrambled eggs + a delicious orange.
I’ve also been loving having my energy back to be able to get back to my early morning workouts. So far this week I’ve done a little PiYo, some T25, and some 10lb Slimdown Xtreme Kickboxing (always a favorite!).
It’s amazing how much a little movement will do for the soul.
As for things on the food front, I’ve finally been able to move slightly more out of the “all carbs” food group. And I say slightly because…I’ll always love my carbs.
These Chobani flip yogurts are absolutely a favorite of mine. I picked this one up on Wednesday during a quick run in to Target for diapers.
And believe it or not, I left the store with ONLY a box of diapers and a yogurt. That’s a record.
I’ve also totally been digging my salads for lunch, even though they’re nothing out of the ordinary. Grilled chicken, avocado, feta cheese, dried cranberries, lots of veggies, and balsamic vinaigrette.
I don’t know if this combo will ever get old?!
Another favorite that’s recently been reintroduced into my life? Chocolate Chip Cookie Dough LARABARS. Mannnn, how could I forget how good they are?!
FYI: Target has them on sale right now for $5.00/box!
Tuesday night was a real treat because I was able to get out of the house for a bit for some one on one time with my girl, Sarah. We decided to meet up at Lanie’s Café (another favorite of mine!) and the food was nothing short of incredible.
After going back and forth, we decided to share their bruschetta appetizer. At first, I was fairly confident they accidentally brought us out a pizza instead but, no, it was bruschetta.
And it was insaaaaanely good.
We also both wound up getting the same thing for dinner – grilled chicken + eggplant sandwich with provolone, spinach, roasted red peppers, and garlic aioli. The waitress told us that we’d likely have leftovers for the next day, and she wasn’t kidding.
The sandwich was HUGE! I made it through about half and thoroughly enjoyed the second half for lunch yesterday while working at home. But, of course, as good as the food was, the company was even better. Girl time is always the best.
And you know what else is the best? This smile.
We had to go get some stamps yesterday to mail out our Christmas cards and Lucas got SO excited seeing the Christmas tree and counting the ornaments.
Lucky for me, he only pulled off about two.

Oh man, I’m so jealous of your 4 day weekend! I’m actually working 6 day weeks right now, clocking in around 60 hours. My office is attached to the company warehouse and we are so busy with holiday orders coming in, they’ve been pulling the office staff to go help pull orders! I haven’t minded because it means a TON of extra exercise but it means I’m not getting as ahead on my work as I’d like…We were also offered overtime to help them out more so I’ve been fully taking advantage of that so I’m not really complaining. ;)
It sounds like you’re back in your groove! My husband and I took Tuesday off for a day date of shopping and dinner. It was so fun and we finished our Christmas shopping!
That is going to be so fun shopping on a Friday, I also somewhat of took Friday off, I will be working from home anyways, but with a coffee shop and a change of scenery it sure doesn’t seem like work! Enjoy your time off!

ohhhh i want that 4 day weekend (and work from home Wednesdays) in my life right about now! i have the week off of Christmas and it can’t come soon enough — so stoked to get upstate for that week (and hopefully do a little snowboarding, if we ever get snow! not that i really want it…so that’s a catch 22). glad you’re feeling well enough to get some good workouts in. it’s supposed to be 57 degrees here in NYC today so i’m stoked for an evening run along the river after work!
I am a little jealous, I need to take a day off to do my baking, but unlike you, I have no vacation time left for the year :( But I am hoping to squeeze some baking in between a 5K Santa run on Saturday morning and a Moms On The Run Christmas party on Saturday night. Oh and I do love those yogurts too, the Key Lime is my favorite!
I get such a longing for scrambled eggs sometimes…actually and hard or semi hard boiled!!! So satisfying!
Hi Courtney! Besides your lovely dinner with your friend, your eats look very similar to mine lately! I’ve been obsessed with Chobani flips, Larabars, and cuties. I’m so glad that you’re starting to feel better, too!

Odd question…as I’m new to being pregnant…9 weeks now, but I noticed in your salad, you had feta cheese. I had read that I shouldn’t eat feta since it was unpasteurized. Is that wrong? I love feta, but am currently not eating it.

Hey Cathy, congrats on your pregnancy! As long as the feta is pasteurized, then you’re fine (I double checked with my doc)! Any feta you were to buy from the grocery store is likely going to be pasteurized, so you shouldn’t have a problem. Enjoy! ;)
