Note: I first created this recipe in 2011 as part of a contest with Love Grown Foods, a Sweet Tooth sponsor.
It will surprise just about NOBODY that I love cookies. And bar cookies are some of my favorites. They’re chewy, dense, easy to make in big batches and you can even cut them into fun shapes.
Love Blondies Click To TweetThis recipe for Love Blondies is inspired by my Granola Blondies.
These blondies are both soft and chewy yet crunchy and sweet, thanks to the granola. Basically, they’re awesome.
Love Blondies
Ingredients
- 1 egg
- 1 egg white
- 1 cup packed brown sugar
- 1/4 cup canola oil
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 cups Love Grown Foods Raisin Almond Crunch granola
- 1 cup dried cranberries
Instructions
- Preheat oven to 350 degrees F.
- Combine egg, egg white, brown sugar and oil; mix well. Combine the flour, baking powder and salt; stir into the wet ingredients just until blended. Stir in granola & dried cranberries (batter will be thick).
- Spread into a 9-in. square baking pan coated with nonstick cooking spray. Bake at 350 degrees for 25-28 minutes, or until golden brown. Cool & cut into bars…or use a cookie cutter to cut into hearts to spread the love. ENJOY!
Typically, I cut these blondies into bars, but considering that they’re made with Love Grown granola and all, I found it rather fitting to cut them into hearts.
Now, just be warned — these will not last long in your house (so consider making a double batch!).

Nikki says
Wow these look delicious!! I have seen a lot of people using the Love Grown Granola and I was wondering if you can purchase it in stores?
Courtney says
I *think* it may be in some stores, but I know it’s not near me
Jenny says
Those looks so delicious aaand the ingredient list is so simple!! I made blondies the other week and my recipe included butter but I browned the butter before hand. Really added this caramel flavor that was so delicious. Shoulda cut them into hearts though ;)

Courtney,
I’m a loyal reader of yours and ive noticed you switched from the sweetened vanilla almond milk to the unsweetened vanilla. Do you notice a big difference, particularly in your smoothies/shakes? What’s it like compared to the other?
Thanks,
Katherine
P.S. Keep writing! Love the blog ;)
Courtney says
Hi Katy! Yes, I did switch recently and honestly, I can’t tell the difference when I use it in smoothies or oatmeal. The only time I can taste a difference is if I’m having it as-is, like in a bowl of cereal, and it’s slightly less sweet. It’s still just as creamy, with less calories (from sugar) and is delish. Thanks so much for reading! :)

I bought some on Amazon. It’s sold in 3 packs, I think for about $12. Really not bad, at least compared to other granola prices in my NYC stores. And SO DELICIOUS!
