Making The Most Of Leftovers

I am absolutely LOVING all the positive energy that you guys have been sending this way today! It’s so nice to see, that even with some setbacks, so many of you were still able to find something positive in your day. I really need to do this more. Heck, we should ALL do it more, don’t you think?!?

Sometimes it’s so easy to focus solely on the negative, yet making it a point to pick just one positive thing about your day can make SUCH a difference! I think I’m going to start tonight!

One positive thing about my day: I had a killer workout at the gym today! :-D

Workout

Despite a quick (and immediately failed) attempt at running on the treadmill (I guess the foot just isn’t ready yet…) I kept on moving with what I knew I could do. I hopped on the new elliptical machine for a solid, sweaty 30 minutes of intervals.

The new machine looks pretty similar to the one above, which is totally different from the rest of the machines at the gym. I really like how the new machine has more programs, and even a special “arm blaster” and “glutes” mini blaster that you can supplement to your current workout. It’s awesome!

After the elliptical, I trekked on over to the StairMaster…

I really despise this thing…yet I keep going back! The intensity of the workout I get on this machine just boggles my mind. Up until today, I’ve only attempted 10 minutes…apparently today I had my confident pants on and decided to do 20…I’m glad I made it home in one piece. ;)

Dinner

By the time I got home and showered, dinner was a-callin’ my name! I wanted to try to use up some more of my leftover Roasted Eggplant & Feta Dip, but I wasn’t really feelin’ it solo…

Then, all of a sudden, I got an intense craving for eggs…

And quite possibly one of the best omelets I’ve ever made was created. :-D

Talk about making the most of leftovers! :-P I simply cooked up 1/2 cup egg whites + 1/4 cup egg beaters, filled it with about 1/3 cup of the eggplant & feta dip, and sprinkled a little S&P. It was so amazing, it didn’t even need ketchup…

And if you know me, you know ketchup + eggs go together like peanut butter + jelly. Oh yeah, speaking of which…

That made an appearance with dinner, too. A lightly toasted hunk of Italian bread spread with some Skippy Natural Super Chunk + Raspberry Polaner All Fruit. Simply delicious!

Time to go watch a little guilty pleasure TV – One Tree Hill!

    mmm i love omelettes! (never know how to spell them though =/) great idea to add eggplant! bfast for dinner is definitely a must.

    Guess what I made for dinner... eggs! I was totally craving eggs, so I made a omelet with fresh tomatoes, red pepper, a hint of garlic, and some fresh basil. It was delicious! Breakfast for dinner is so simple, and so satisfying sometimes.

    I love breakfast for dinner. I wonder where your positive attitude comes from? Everyone needs to find something to look forward to each and every day, even if it's just the thought of crawling into your cozy covers again at the end of the day

    We love breakfast for dinner at our house. So much so in fact, that we have a night dedicated each week to it. It's super easy & very satisfying.

    I can do savory breakfasts for dinner (like eggs) but not things like pancakes or french toast:)

    breakfast for dinner! growing up, my mom would sometimes make waffles for dinner...i looooved those nights!
