Need a quick, delicious, and nutritious snack to enjoy after school or work with the kiddos (or by yourself)? These mini peanut butter chocolate chip muffins are perfect!

A couple of weeks ago, I picked Lucas up from daycare and his sitter proceeded to tell me that, all day long, Lucas kept going over to her kitchen stuff and saying “bake! bake!” So once we got home…we baked! Smile

I wanted something we could throw together quickly, since his attention span is, well, minimal. And these not only turned out delicious, but they were quick AND convenient to have on hand the rest of the week.

Mini Peanut Butter Chocolate Chip Muffins

Here’s a look at the recipe we used!

Mini Peanut Butter Chocolate Chip Muffins

(lightly adapted from this recipe)

Ingredients:

  • 1/2 cup all-purpose flour
  • 1/2 cup whole-wheat flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup peanut butter
  • 1 tbsp butter, softened
  • 1/2 cup packed brown sugar
  • 1 egg
  • 6 tbsp milk
  • 3/4 cup mini chocolate chips

Directions:

Preheat oven to 375º F. Grease/spray two mini muffin tins with cooking spray. Combine all-purpose flour, whole-wheat flour, baking powder and salt in small bowl. Beat butter, peanut butter and brown sugar in large mixer bowl until creamy. Add egg and milk; beat until smooth. Add flour mixture to peanut butter mixture; beat until just blended. Stir in chocolate chips. Spoon batter into prepared cups, filling 3/4 full.
Bake for 13-15 minutes or until wooden pick inserted in centers comes out slightly sticky. Cool for a few minutes and enjoy! Smile

    Brown sugar and chocolate chips - oh yes. Mini versions of anything are my preference. These sound delicious!
