A dinner recipe that can be put on our table with minimal effort is a total win over here (but you all probably know that by now!). One of the easiest ways to get dinner on the table during busy weeknights is, by far, the crockpot. It’s a fabulous contraption, and I love the darn thing so much that I even own two of them (a smaller size and a larger size).
A few weeks ago, I shared some delicious looking one pot meals that are great for busy weeknights, but I still haven’t had the chance to try all of them. For today’s post, though, we’re talking crockpot, baby. And I’m sharing 10 of my favorite, tried and true, make on repeat, crockpot recipes. Many of them are mine, some are others, but I can attest to all of them being delicious.
10. Slow Cooker BBQ Pulled Chicken
^^Another old post alert! I really should go back and update that post because it is probably one of the most frequently referenced recipe posts that I use. This BBQ pulled chicken is a recipe that is, absolutely, a staple in our house. We love making it when we have friends over, because it makes a ton, and it’s just so. darn. good.
9. Easy Crockpot Chicken and Biscuits
This meal is simple, yet perfect. Cook up a side of some greens/veggies or make a nice big salad, you’re good to go.
8. Low-Fat Crockpot Veggie Stew
This is an old post that I really need to do a “re-do” of, but I promise it’s a good one! This is definitely a favorite of mine during the winter months (Jay tolerates it but it’s not his favorite – no meat – yadda yadda), and I love pairing it with some warm, crusty bread.
7. Mal’s Easy Chili
Ohhh, Mal. You make a mean chili! And when this one is paired with some shredded cheddar and loaded into a bread bowl? Oh, forget it.
6. Slow Cooker Lean Vegetable Beef Soup
This one sort of goes against my usual rule of “no extra work outside the crockpot,” but the quick amount of time it takes to brown the meat is totally worth it. The flavor in this soup is really incredible and, honestly, I think it’s even better the second day. Our favorite pairing with this soup is my Cheesy Italian Quick Bread, but really, any bread would do!
5. Crockpot Stuffed Pepper Soup
I know I’ve mentioned this before, but this recipe was one that I really wasn’t planning to share on the blog (hence the crappy iPhone photo). And, wouldn’t you know, this is one of my more popular recipes now! But I can totally see why. It’s a full, hearty, flavorful meal, that makes enough to feed a small army (or, okay, a large family).
4. Black Bean and Butternut Squash Soup
This is a delicious soup recipe from my gal, Chelsey, that is perfectly adaptable in the crockpot (her original recipe doesn’t use the crockpot, but it totally works!). This one is great to make on a Sunday to have for lunches for the week (Jay isn’t huge on the black beans so it’s not really one we’d make for dinner for ourselves). Delicious AND nutritious!
3. Creamy Crockpot Steel Cut Oatmeal
Okay, okay, this isn’t really a dinner recipe (unless oatmeal for dinner is your thing, which I would totally NOT knock you for) but it was too good not to include because it is one of my favorite crockpot recipes at the moment. Some of the best oats EVER.
2. Crockpot Shredded Beef Enchiladas
This recipe comes from the one and only Kristin who, I must say, is an absolute doll to chat with via email. We like to keep in touch and talk “shop” (aka, kiddos) since Lucas and Lincoln are only a few weeks apart. But really, besides that, she has some great recipes.
1. Healthy Crockpot Beef and Broccoli
I actually almost forgot about this recipe. I came across it a few weeks ago, and as soon as I saw it, it was one of those “Ohmygoddddthatrecipeeeee” moments. Simple, delicious, cook up some brown rice, and you’re good to go.

I recently found this recipe for crock pot spaghetti – not healthy at all, but it’s been my go to on snow days and during cold weather. I didn’t even realize a crock pot could cook pasta, but it is amazing!

I love how in 2010 you had your slow cooker BBQ pulled chicken on a sandwich thin with vegetables and in 2015 you’ve upgraded to the bun + cheese + carbs version :D Much better!

I always see wonderful (vegetarian) crockpot recipes that I REALLY want to try, but I’m so afraid of leaving it on all day while I’m at work! I know that is the whole point, but I’m terrified of burning down my house! (Issues stemming from my dad being a firefighter when I was little, I guess…)

I NEED to start using my crockpot more! I always have good intentions of preparing crockpot meals, but somehow it always falls to the wayside. I have made chili and steel cut oatmeal in the crockpot before, as well as Skinny Taste’s taco chicken chili (http://www.skinnytaste.com/2008/11/crock-pot-chicken-taco-chili-4-pts.html). I definitely want to try some of your ideas though! Some other things I’ve been meaning to try: chicken caesar sandwiches (cook chicken in crockpot), minestrone soup, chicken burrito bowls, and hamburger soup. So many uses for the crockpot!

The minute I get out of college or move into a place of my own, I think the crockpot is the first kitchen utensil I am going to provide for myself. It is so versatile and useful it seems! Oh yes, I am ALL about the Crock Pot around here. I use it at least once a week, and more like 2-3x/week lately. I still want to try the steel cut oats in the Crock Pot. I love that idea for an easy week of breakfasts!

Hi! Do you know of any replacement or substitute for the French onion soup in the BBQ chicken? I’m gluten free and of course campbells has to add wheat gluten to all of its soups.
