As I’m sitting down on Monday evening to relax and type up this post, I can’t help but feeling like life is just…good.
You guys like my new “space” to hang out, work, and sleep? While there is an office I could set up shop in, this bed is actually crazy comfy (our bed is set up at my parents’ house currently) and I’ve been enjoying using it for working on the computer, too.
So tonight, I’m chatting with you while watching some of The Bachelorette (I didn’t let myself get into this season, but just catching a few minutes is showing me there’s still plenty of crazy going on), and snacking on a little something that is rocking my world…and, truth be told, these actually “should” be Lucas’s snacks. Whoops.
I asked Jay to pick up some graham sticks for Lucas the other day, but the only ones he could find were Scooby snacks (love them!). They’re a little bit too hard for Lucas still so – OH WELL – I guess mom will have to eat them. And I love dipping them in applesauce…and peanut butter…or just chowing on the whole box.
But when I’m not chowing down on Scooby’s, I will say that it feels SO good to be back to some regular eating and workouts once again! I’ve taken advantage of the basement gym here for the past three days, and I’m really having a great time playing around with making up circuits again. This morning’s nice and sweaty and had the muscles burning.
On the food front, fresh produce has been the name of the game. I prepped myself a few salads for the week – grilled chicken with strawberries, craisins, a few blueberries, avocado, carrots, and cucumbers. OMG they’re totally hitting the spot.
And tonight, Jay and I made dinner for all of us: Veggie-Filled Sloppy Joes with green beans. I saw them in an older meal plan of mine from January last week, and knew they needed to be on the menu ASAP. They’re super delish, great for you, and it makes a bunch (we still have plenty of leftovers). Mmm, mmmm.
Lucas wasn’t a huge fan of it tonight, but he did house a couple bowls of Easy Cheesy Spinach Pasta, so I’ll take what I can get. And so we could eat our meal in peace, we gave him a few extra minutes on the iPad. He loves his animals app (and actually, the sound machine app even more).
And now that I’ve run out of Scooby snacks, I think it’s about time to wrap up today’s post and head downstairs for a few more. #cantstopwontstop.
