No Bake Peanut Butter Granola Bars

These No Bake Peanut Butter Granola Bars make for a perfect after school snack, mid-morning snack, crumbled yogurt topping, and more. The whole family will be going back for seconds…or thirds!

No Bake Peanut Butter Granola Bars

Peanut butter lovers…snack lovers…granola lovers…rejoice! I’ve got something good for you today.

Truth be told, I’m honestly not sure I had ever attempted making my own granola bars. Which is crazy to me because we always have them in the house and all of us eat them. They’re quick, convenient, and they’re basically goof at any time of day.

So I finally decided to take the plunge and make some peanut butter granola bars myself, and now I’m obsessed and want to try all.the.flavor.combos.

For this recipe, I’m featuring two of my favorite products from Attune Foods (who is kindly sponsoring this post!): Erewhon Crispy Brown Rice and Sweet Home Farm French Vanilla Granola.

Erewhon Organic Cereals makes a few different varieties of their crispy rice, but my favorite is the simple, plain brown rice. It’s versatile and you can use it for all sorts of recipes (like my favorite Toffee Chocolate Crispy Cookies or even some Pumpkin Spice Crispy Rice Treats, for example!). And better yet, all of their cereals are USDA Organic, Non-GMO Project Verified, and made in a peanut-free and tree nut-free facility!

Sweet Home Farm makes a few different varieties of their granolas, but the French Vanilla with Almonds is out of this world. All of their granola is grown and made without GMOs, and never have artificial colors! It’s amazing on top of yogurt, straight out of the carton (guilty!), and totally delicious in these granola bars.

The recipe is super simple to make, and the best part is that there is no baking required. Just a quick heat and stir of a couple of ingredients on the stove is the only “cooking” you’ll need to do.

Then you’ll make sure everything is well mixed and incorporated…and you’ll have to try very, very hard to keep your hands out of the bowl.

Once everything is mixed, press it into your baking dish and let it cool completely.

Once cooled, cut into bars (or squares, or triangles…there are no rules!) and go to town!

Lucas was definitely a fan of them, but I’d have to say that I’m guilty of being the one who has eaten the most of them. #noshame

They’ve got a good touch of sweetness thanks to the honey, granola, and raisins, and all of the flavors combined just really make these a winner.

And not only are they great as-is, but they’re also delicious if you crumble them on top of some yogurt, too!

The best part about these peanut butter granola bars is that they could be super versatile, too. I think my best batch is going to have to include some mini chocolate chips for SURE. Give ‘em a try!

No Bake Peanut Butter Granola Bars

Ingredients

  • 2 1/2 cups Erewhon crispy brown rice cereal
  • 1 cup quick-cooking oats
  • 1 cup Sweet Home Farm french vanilla granola
  • 1/2 cup raisins
  • 1/2 cup packed brown sugar
  • 1/2 cup honey
  • 1/2 cup (heaping) peanut butter
  • 1 teaspoon vanilla extract

Instructions

  1. Grease a 9x13 inch baking dish with cooking spray.
  2. In a large bowl, stir together the rice cereal, oats, granola, and raisins. Set aside.
  3. Combine the brown sugar and honey in a small saucepan over medium heat. Heat just until boiling, then remove from heat and stir in peanut butter and vanilla until smooth.
  4. Pour peanut butter mixture over the cereal and oat mixture, and mix well.
  5. Press into the prepared pan and allow to cool completely. Cut into bars and enjoy!

The next time you see any of these Attune Foods varieties at your grocery store, be sure to try some! Not only are the Erewhon and Sweet Home Farms brands great, but they’ve also got Uncle Sam high fiber cereals and Peace Cereal, which are both equally delicious, too.

Fun facts: I’m pretty sure Lucas and I ate about half the box of Purple Corn Flakes right before dinner on the day they arrived, and I actually have another great cookie recipe that features Uncle Sam cereal (these Uncle Sam Crispy Dark Chocolate Cookies!).
