Oatmeal Banana Toddler Muffins

These Oatmeal Banana Toddler Muffins are not only great for the toddler in your home – they’re great for the whole family! Incredibly moist and lightly sweetened with a touch of sugar and ripened bananas, they’re sure to be a hit.

Oatmeal Banana Toddler Muffins

In an effort to try and get ready for when the baby arrived, I did quite a bit of meal prep and planning (you may remember my freezer meal post?!) But the thing is, it’s not only dinner time that could use a little extra attention; both breakfast and lunch can become quite crazy if you don’t already have something planned in advance. I’m sure many of you know what I’m talking about!

Lucas had recently started showing interest again in muffins, so I figured that a quick and easy muffin recipe would be great to have on hand and keep stocked in the freezer for when I need some breakfast and/or snacks for him. And let’s not kid ourselves…for myself, too. Because while I initially made these muffins with Lucas in mind, turns out that they’re perfectly fitting for adults, too. Especially when warmed up and topped with a little peanut or almond butter…ohhhhh myyyyy.

But I digress.

The (other) good news is that these muffins freeze wonderfully. You can just grab however many you need, when you need them, and give them a quick defrost in the microwave for 20-30 seconds or so and you’re good to go!

They’re nice and moist, with the addition of the cream cheese, and (in my opinion) just the perfect amount of sweetness. While I’m not one to shy away from a sweeter muffin, I do try to keep the sugar a bit lower when feeding them to my already-active-enough toddler.

At any rate, I have no doubt that these will remain a staple in our house for a while now, and I love the fact that they’re filled with good stuff like oats and bananas.

Ingredients

  • 1 (8 ounce) cream cheese, softened
  • 1/4 cup unsweetened applesauce
  • 1/4 cup canola oil
  • 1/2 cup sugar
  • 2 eggs
  • 3 really ripe bananas, mashed
  • 1 tsp vanilla extract
  • 1 cup quick oats
  • 1 cup white whole wheat flour
  • 3/4 cup all purpose flour
  • 1-1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • cinnamon sugar for dusting, optional

Instructions

  1. Preheat oven to 350 degrees. Grease or line two 12-cup muffin tins with paper liners.
  2. Cream softened cream cheese, applesauce, oil, and sugar until smooth.
  3. Add eggs one at a time and continue mixing.
  4. Add bananas and vanilla
  5. Add oats, both flours, baking powder, baking soda, salt, and cinnamon. Mix until just combined (do not overmix!).
  6. Fill muffin tins ? full, sprinkle with cinnamon sugar, if desired.
  7. Bake at 350 degrees for 16-18 minutes or until top springs back or toothpick comes out clean. Enjoy!

    no toddler in my house but these look like the perfect thing to make ahead of time and freeze for busy mornings rushing off to law school this fall. giving the recipe a try this weekend. thanks for sharing!

      Always worth a try! I'd think it would be fine, although it might change the flavor slightly
