Oreo Cream Cupcakes!

I have been BUSY in the kitchen ever since I got home today!! :-D  I’ll get to the good stuff in a minute, but let’s do a quick recap of the rest of today.
Mid-morning, the tummy started grumblin’ (I figured it would) so I had a blueberry Clif Z Bar.  I LOVE having these for a snack.

I later enjoyed my leftover soup that I brought today with me to work…it’s always so much better the longer it sits!

For dinner tonight, I was on my own AGAIN, since the hubby had to work out of town. :(  Luckily, today should be the  last of it for a while!  I decided to still go ahead and have what we had originally planned on, except for just a single serving, rather than 2.  On the menu tonight…Chicken & Veggie Quesadilla!

Mmmmm, looks GOOD, right? ;)  It was super fast & easy to make too!  First, I started with a La Tortilla Factory wrap, and placed it in a skillet coated with cooking spray.  Then I sprinkled on the cheese – probably about 3 tbsp. of reduced fat cheddar mixed with a little sprinkling of part-skim mozzarella we had on hand.

Once the cheese started to melt, I added my “mix-ins”: cooked chicken, red & green peppers, red onion, shredded carrots, and diced tomatoes.

After about a minute, I folded over the one side, and let it cook for about 1-2 minutes.  After that, I flipped it again, and let it do the same thing on the other side!  They turned out so much better than I expected!  Who knew I was good with the Mexican dishes!? ;)

On the side, I had some roasted zucchini & yellow squash, which I tossed with a teeny bit of EVOO, and some S & P.  Throw in the oven at 400 degrees for about 15 minutes, or until they’re softened to your liking.

Dinner deserves an A tonight! :-D (It would have been an A+ if I didn’t have to eat it alone! GRRR!)

OK, so now onto the baking!  I have been in the mood to bake some form of cupcakes for what seems like forever, but just haven’t had enough time.  I figured tonight was the perfect night since I had the kitchen to myself!  So I ended up making these bad boys!

Oreo Cupcakes with Oreo Cream Frosting!!

It was quite a process to do everything from start to finish.  I LOVE baking, but cake mixes are usually involved. ;)  I decided to go from SCRATCH tonight, so it took a lot more effort!

Have I ever mentioned a make an absolute MESS in the kitchen when I bake?  No?  Oh ok…well here’s some proof. ;)

I actually ate my dinner while the cupcakes were cooling, so they’d be ready to frost by the time I was done.  It’s all about time management!

The frosting was a cream cheese frosting base, with crushed oreos thrown right into the mix!

I don’t know what was wrong with me, but my darn finger kept accidentally finding itself in the frosting…at least 5 times. ;)

I’m trying REALLY hard to hold off on trying one until Jay gets home, since he should be here pretty soon.  It’s torture.

Hopefully the finished product turns out as good as the frosting is! :-D

      Sam, The hubby LOVED the cupcakes! He had the day off today, and I got the message around 12:30 or so..."I can't stop eating the cupcakes!!" :-D
