Apparently, we have a new dinner routine in our house.
Cody has now decided that as soon as I sit down for dinner, it’s time to play some fetch. Seriously, I don’t know what it is with this cat, but he loooooves to play fetch with his water jug pull top!
I hadn’t been sitting more than five minutes before the little guy came to give me a visit…
“C’mon Mom, let’s PLAY!”
So, sure enough, we had a little fun.
Readyyyyy….. (P.S. – notice the exact same attire as Saturday’s festivities…hey, I only own one St. Patty’s shirt, what can I say?!?)

Finally, it was time to dig into dinner! Although it’s not exactly festive, I figured I got my corned beef fix earlier in the week, so it’s ok. Tonight’s menu called for stir fry!
This was actually quite simple to throw together, is super tasty, and makes a bunch of leftovers (when cooking for two). I found it while fishing through my recipe binder, and it looks like it may have come from an old Self magazine.
Hubby and I both agreed, it’s a keeper!
Chicken & Veggie Stir-Fry
Ingredients:
Stir-Fry Sauce
- 2 tsp cornstarch
- 3/4 cup low-sodium chicken broth
- 1/4 cup hoisin sauce
- 2 tbsp low-sodium soy sauce
Stir-Fry
- 1/2 tsp ground ginger
- 2 cloves chopped garlic
- 1 lb. boneless chicken breasts, cut into 1/2-inch cubes
- 1 tbsp canola oil (or peanut)
- 1 zucchini, cut into 1-inch chunks
- 1 yellow squash, cut into 1-inch chunks
- 1 red bell pepper, cored, seeded and cut into 1-inch pieces
- 1 package frozen sugar snap peas, pre-heated in microwave
Directions:
Dissolve cornstarch in broth in a bowl; stir in hoisin and soy sauce and set aside. In another bowl, toss ginger, garlic and chicken. Heat oil in a large pan over medium-high heat; cook chicken until nearly cooked through, about 4 mins. Add vegetables and cook, stirring occasionally, about 2-3 mins. Add reserved sauce and cook, stirring until sauce is thick, about 5 mins.
Serve over cooked brown rice, quinoa, or any other grain of choice. ENJOY!
Jay and I are thinking we may head back out this evening to visit our friends again at bowling and enjoy an Irish-inspired beverage…or two. Hey, gotta honor the Irish heritage in me!

Clearly our cats must be related! Ha! My Rocky loves those silly tabs too! He goes bonkers for them!! Hilarious!! My in-laws save then up for special occasions and give them to Rocky as gifts. Who needs fancy cat toys when cats live for plastic and cardbord!!! LOL

Cody is so cute!! Our cat Summer gets ready with me in the morning. I put my brush on the counter and she uses it to brush herself then she does the same thing with the blush brush on her little kitty cheeks…ha-ha. She is the funniest little thing I know and we call her “our little princess”.
