Probably Should Have Waited

So I think last night was the first night in well over a month where Jay and I actually had dinner at the dinner table, just the two of us. I felt like that made it a pretty special occasion so I lit a candle for some ambiance.

What can I say? We just love our coffee table dinners.

Last night’s dinner was courtesy of another McCormick Recipe Inspirations packet. The last one that I made was super good, so when I saw they were on sale for $1.00, I couldn’t help but grab another one.

I went for the Caribbean Grilled Steak this time, since we already had a steak in the freezer we could use. Plus, anytime there’s red meat involved, Jay is always a happy camper.

Now that I think about it, I probably should have waited to make this meal until I needed something…

Yes, I can be that wife. Winking smile

Kidding aside, this meal was absolutely another winner. Jay and I loved the seasoning flavor (even though I did it “wrong” and only seasoned one side of the meat – oops) on the steak and on the grilled pineapple. We also now have a TON leftover, which I’m not quite sure what we’ll do with…maybe some philly steak sandwiches over the weekend?

To go along with our steak and pineapple, I cooked up a small batch of sweet potato fries which also came out great.

As for the rest of our Thursday evening? Well, it pretty much looked like this…

Catching up on the DVR, my cozy blanket, a couple pieces of Halloween candy, and my cuddle buddy. Life is good.

Breakfast

Seeing as though there’s been about, umm, one vegetable to hit my lips over the past couple of days, I decided to make up for it this morning.

Just check out all those veggies!

I sautéed some yellow pepper, red onion, broccoli, and grape tomatoes for a few minutes before adding a generous helping of fresh spinach.

I then mixed in an egg + 2 egg whites and some feta cheese to make for one mean veggie scramble.

Of course, there’s still some banana bread in the house, so I had a big chunk of that too, heated up and topped with some peanut butter.

Definitely a killerrrrrr (and filling) breakfast.

    I love a veggie-filled breakfast like that once in awhile! I usually crave the sweeter breakfast combos (waffles + PB + banana) or a basic egg sandwich, but once in awhile I want some veggies in the morning too. I think it all balances out :)

    Gush. I can’t get over how cute and cuddly Cody looks in that picture. And I applaud you for getting some veggies in in the morning… I’ve really been slacking on the veggies lately too, but my mornings are usually reserved for something sweet. Speaking of which… your banana bread is coming up in my very near future. I managed to hold off on eating bananas so I have some good and ripe ones, but now I’m out of eggs. Typical…

    Cody is so cute! Sounds like a pretty perfect evening. Don’t feel bad-I can’t even remember the last time John and I had dinner at the dinner table just the two of us. We seem to eat breakfast there together, but when it comes to dinner time, we’re all about the coffee table!

    For some reason I’ve also hardly had any veggies this week. (Lots of lots of yummy carbs and candy though :) )

    You’re so good. I always want eggs and veggies in the morning but the chopping and sauteeing takes so much time. ugh. Yellow peppers are the also the best.

    That veggie scramble looks SO good!!! Your “time to be productive” made me laugh because I’m working on report cards all day today, but took a little break to read a couple blogs haha Time to get back at it!

    Your bread always looks so delectable. That meat looks amazing too- my boy also loves red meat dishes ;) But tut tut to the pineapple- I have having pineapple in savoury dishes. I just cannot do it haha! I’ll stick to it on it’s own or in sweet dishes ;)
