Roasted Veggie Casserole

Productivity has been the name of the game in this household today! Even though my To-Do List is not completely empty, we were able to tackle quite a few items:

  • Catch up on posts
  • Finish guest post
  • Follow up on emails
  • Grocery shopping
  • Go to Verizon
  • Clean out garage for Garage Sale
  • Organize bills
  • Laundry
  • Finish cupcake menu ;)
  • School stuff

I was able to get some school stuff done, but I’m pretty sure that won’t be taken off my To-Do List until next June…either way, I still got some accomplished!

Cody had a pretty busy day too:

  • Nap
  • Play with cat toys
  • Beg for food
  • Meow constantly until I get the attention I deserve

He’s obviously pretty pooped out from everything on his To-Do List too. ;)

Dinner

Our fridge has been FULL of veggies just waiting to be cooked, so tonight I threw a bunch of them together for a delicious Roasted Veggie Casserole.

After seeing the idea on Amy’s blog over the weekend, I decided it would work perfectly for me.

Veggies in the Casserole:

  • 1 zucchini
  • 2 yellow squash
  • 1 head cauliflower
  • 1 medium sweet potato

I simply placed all the cut up veggies into the casserole dish, drizzled them with a little bit of olive oil, and sprinkled about a 1/4 cup bread crumbs, some parmesan cheese, Italian seasoning, garlic powder, and some S&P.

I placed the casserole into a preheated 450 degree oven and baked the dish for about 45 minutes. And for my dinner, I mixed my portion with some leftover ground turkey from Taco Night.

It was not only fantastic, BUTI probably have enough leftovers to feed a small army. They’ll come in handy for lunch this week! :)

Time to go get myself ready to get back to the grind tomorrow. I guess it looks like summer is officially over…BRING ON FALL!!

    The best part of this holiday weekend was...being able to drink coffee and not sweat to death! It is finally cooler in DC :)

    The best part of this weekend was definitely the weather! Hmm, my todo list looked a bit like yours. Laundry's washing & drying, but there's other stuff I ought to get to.
