Productivity has been the name of the game in this household today! Even though my To-Do List is not completely empty, we were able to tackle quite a few items:
- Catch up on posts
- Finish guest post
- Follow up on emails
- Grocery shopping
- Go to Verizon
- Clean out garage for Garage Sale
- Organize bills
- Laundry
- Finish cupcake menu ;)
- School stuff
I was able to get some school stuff done, but I’m pretty sure that won’t be taken off my To-Do List until next June…either way, I still got some accomplished!
Cody had a pretty busy day too:
- Nap
- Play with cat toys
- Beg for food
- Meow constantly until I get the attention I deserve
He’s obviously pretty pooped out from everything on his To-Do List too. ;)
Dinner
Our fridge has been FULL of veggies just waiting to be cooked, so tonight I threw a bunch of them together for a delicious Roasted Veggie Casserole.
After seeing the idea on Amy’s blog over the weekend, I decided it would work perfectly for me.
Veggies in the Casserole:
- 1 zucchini
- 2 yellow squash
- 1 head cauliflower
- 1 medium sweet potato
I simply placed all the cut up veggies into the casserole dish, drizzled them with a little bit of olive oil, and sprinkled about a 1/4 cup bread crumbs, some parmesan cheese, Italian seasoning, garlic powder, and some S&P.
I placed the casserole into a preheated 450 degree oven and baked the dish for about 45 minutes. And for my dinner, I mixed my portion with some leftover ground turkey from Taco Night.
It was not only fantastic, BUTI probably have enough leftovers to feed a small army. They’ll come in handy for lunch this week! :)
Time to go get myself ready to get back to the grind tomorrow. I guess it looks like summer is officially over…BRING ON FALL!!
