So when are weekends going to permanently include a third day? That’s what I wanna know…because, once again, this weekend just flew by. Anyone else?
Our Saturday and Sunday were both jam packed from beginning to end, and for the first time in along time, I took a bunch of pictures of everything. So let’s just dive right in with some of my favorite highlights!
Starting with Saturday morning pancakes.
I recently got a huge goody box full of Immaculate Baking Company’s new baking mixes. This is the first one we’ve tried, but it was great, and I can’t wait to try out some of the others soon.
Thanks again, IBC! Lucas definitely approves of his pancakes.
So much so that I made a huge batch for him to have during the week. Score!
After Lucas’s morning nap, we went and dropped him off at my parents’ house and Jay and I spent a couple hours out running errands for the afternoon.
First stop: Home Depot for some DIY supplies(!).
Second stop: Whole Foods hot/cold bar for some lunch.
Third stop: Lowe’s for some more DIY supplies.
Fourth stop: BJ’s for some essentials.
Later Saturday evening, we had our cousin friends Brian and Mal over for dinner and some fall beer sampling.
Check out that assortment, baby!
The guys.
The gals. And the child.
He and Cody had no problem making their own fun while the adults started out their sampling.
Once we put Lucas down for bed, it was time to get dinner cookin’!
We had some of the most amazing salmon I’ve ever had, and I cannot wait to share more about it with you guys soon.
After dinner, we decided to play a couple rounds of 10,000.
And had the most amaaaazing pumpkin apple cobbler for dessert, thanks to Mal.
Oh, and in case you’re curious about the results of the beer sampling, we all agreed that the favorite was most definitely Blue Point Brewing Co.’s Oktoberfest. SO good.
Sunday kicked off the start of our DIY projects!
Heyoooooo, look at me workin’ a nail gun!
A little later in the afternoon, Lucas and I were on our way for an afternoon out!
In case you’re curious, I just recently bought that shirt from Target and I love it.
Our first stop was a trip to Target, where I just so happened to find (and purchased) these Pumpkin Spice morsels.
I cannot WAIT to put these things to use. I’ve already got a few different ideas!
After Target, we headed over for my friend Heather’s son, Logan’s, third birthday party.
(Lucas looks quite a bit different than he did at Logan’s birthday last year!) Happy Birthday, Logan!
Oh, and Lucas decided he wanted to attempt cake once again…
Turns out, he actually really digs chocolate. Go figure?!
And that’s all I’ve got…whew, I forgot how long these posts can be when I actually take the time to take photos and share ‘em all. Hopefully I didn’t lose ya.
Hope you guys all had a great weekend! Anything fun happen? And good shopping? Good workouts? Good eats?
*FYI: Thanks so much for all the feedback on the TOMS from Friday’s post. Talk about perfect timing…Zulily is having a huge sale on TOMS tomorrow through Thursday!* Eeeeeeek!
*I originally said it started today, but it looks like it must start tomorrow maybe?

So much fall goodness in this post! Can’t wait to bake up something with the pumpkin spice morsels.
Erica @ For the Sake of Cake says
Can’t wait to see what you come up with for those morsels! I saw them this weekend but didn’t really have anything in mind to do with them. (Besides guzzle them straight from the bag…)
Brynn says
I love the idea of a beer tasting night – how fun! Pumpkin seems to have made its way into your house in full effect. Thanks for sharing the dessert recipe, I plan to whip it up for girl’s night this week!
Heather @fitncookies says
Can’t wait to see the DIY project complete!! I know it’ll be fantastic! So funny that Lucas digs the chocolate cake. He’s just a picky little boy :) My weekend included a walk for ALS and a wedding! It was a fantastic, but too fast, weekend
Kim @FITsique says
All things pumpkin! I love fall bears and that pumpkin apple cobbler looks divine! You are a power woman handling babies and power tools, go you!
Tiff @ Love, Sweat, & Beers says
Livin’ the dream! ;) Sounds like a great weekend. I mean, pumpkin apple cobbler (cobblers are my fav) and fall beer would definitely make me happy.
Dana says
I love all the pictures and definitely did not get lost!! I’m glad you had a good weekend! Also I really like that top from target, it looks very versatile. Over the weekend I decided to make the pumpkin spice puppy chow from your last post, it’s pretty good, but I think I like the original puppy chow better. I tagged you in the description of the pic on instagram so you could see the finish product!
Have a good day! : )
Stacey M. says
Ooooo … I can’t wait to see the end result of your DIY project. :)
My weekend started a little early on Friday afternoon. I took a half day of vacation to travel with my fiance and some friends to Williamson, NY (near Rochester) for a stock car race (my fiance owns and races his own stock car). It was a VERY HOT afternoon (I think it reached 96 degrees out there), but we had a great time as always. Post-race included a night out with our racing friends. We’ve met some awesome people at the race track, for sure.
Other than that, I took care of the usual household chores (laundry, cleaning, mowing the lawn) and attended a friends surprise wedding reception. They didn’t tell anyone they were getting married, but just invited everyone over for a BBQ then surprised them all. Awesome idea for sure.
Oh, and one last thing … I formally “proposed” to my girls to be in wedding next October and they all accepted!
Courtney says
Awww, how awesome!! :)
Sarah @ Sweet Miles says
Looks like your weekend was wonderful!! Love that you had a fall beer testing..I think my husband would be all over that! And don’t worry, I’ve got my credit card ready for the Toms sale ;)
Ashley @ My Food N Fitness Diaries says
Love the DIY talk and photos! ;) Looks like you convinced Jay! Can’t wait to see the the final product!
Crap…Zulily is just going to feed my obsession with Toms! I’m hoping they have kids’ sizes. Would love to get a pair for Hunter!
Courtney says
Yes! I not only convinced him…he’s been doing most of the work LOL ;)
Kalley says
Ok, I know this is super random, but I LOVE how you do your hair. You manage to achieve such great “body” or volume whenever you have your hair up, and it makes me jealous. Any tips? :)
Courtney says
Thanks Kalley! Honestly, it’s gotta be the hairspray, haha! I don’t have voluminous hair at ALL. But I’ve been using a hairspray by Kenra and I love it. I also make sure to use tight elastics so I can then pull the hair up and out a bit so it’s not so flat. Then I spray away :)
haley @Cupcakes and Sunshine.com says
i’m loooving all of Immaculate’s new baking mixes. and the fact that you can find them ANYWHERE. target, kroger, walmart. love ’em!
Jasmine @ A cupcake for my thoughts says
I love the way Lucas is looking at Logan in that second to last picture, so adorable! Love, love your shirt, I so wish we had Target in England, my dad hates taking me to Target when I visit him because he knows I take forever to look at everything! Looks like you all had a great weekend, even though it’s nice to have a relaxing weekends, I love super busy fun weekends!!
Courtney says
I laughed out loud when I saw that pic of Lucas come up too. Too funny!
Kelly @ The Fit Skool says
What a great idea to have a Fall Beer Sampling!!! I had a Sam’s Oktoberfest this weekend, delicious!
Linda @ Running4two says
Sounds like a pretty good weekend! I love that shirt, Target is the best…and I can’t go in there without spending way too much money.
Does that cake have ice cream in the middle?!?!?! I could really go for a slice of that right now. :)
Courtney says
OMG, no it was a chocolate mousse something or other. Unfortunately, I only got the smallest of bites because Lucas attacked it. But it was SO good!
Jennifer says
Thanks for the heads up about the Toms – I will definitely check out the sale! :)
Sam @ Better With Sprinkles says
Love that shirt from Target! And I’m intrigued to see what the DIY jobs are – you’re handling the nail gun like a boss :-p
Bre & Ree says
I have taken part of the Zulily Toms sale a few times, it’s fantastic! I agree, three day weekends are a must! Looks like you had a great weekend!

Sienna says
Thanks for sharing where that shirt was from! I immediately thought it looked like something from Stitch Fix and love it! I’m planning to order one now that I know it’s more in my price range.
Ashley @ A Lady Goes West says
It looks like you got your fair share of pumpkin this weekend! I had some good workouts and went to a pre- and post-natal personal trainer certification course. I also had a little fun with a fancy dinner out with friends. Yes, weekends are always too short!
Courtney says
Oh yeah, I remember you mentioned that course on Friday (I think?). Hope it went well!
Lauren @ The Bikini Experiment says
The weekends do flew by! I took a trip to Whole Foods, got in some good workouts and had friends over for dinner on Saturday night Can’t wait to see you DIY project results! You are a natural with the tools. :-)

Courtney says
Aww, happy (belated) anniversary!
LC says
I Like the DIY photos…I would LOVE them if you and hubby were wearing safety glasses :) Inexpensive and yes, you may feel like a dork, but a moment of dorkiness is so much better than an accident. (and they do make cute pink ones for ladies!)
Anita says
I love that you guys did a beer tasting! So fun. Also I cannot wait to hear more about that salmon– I’ve been grilling salmon almost every week, and I’d love to switch up the recipes a bit!
Always, Anita
