I swear, every time I get a new issue of my Cooking Light magazine subscription in the mail, I wind up with a whole renewed desire to cook dinner again. Thank goodness.
Cody really likes when I get my latest issue, too.
Actually, that’s a lie. I just felt the need to slap a picture of him up here this evening. Forgive me.
So while I have my eye on about a dozen different recipes in this latest issue, I decided that tonight I would throw together my own version of their Shredded Chicken Tacos with Tomatoes and Grilled Corn.
While the original recipe called for using a store-bought rotisserie chicken, I already had two chicken breasts on hand, so I quickly poached them on the stove. Once the were cooked, I planned on coating them in some taco seasoning…only I realized that I was out.
But have no fear! Thanks to the lovely thing that is Google, I figured out a way to make my own taco seasoning blend…

Homemade Taco Seasoning
(Slightly adapted from this recipe)
- 1 tbsp chili powder
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp crushed red pepper flakes
- 1/4 tsp dried oregano
- 1/2 tsp paprika
- 1 tsp cumin
- 1 tsp sea salt
- 1/2 tsp black pepper
This recipe obviously made more than we needed (I only used about 1-1/2 tsp for our chicken), so I have the rest of it stored in a mini plastic container for another time.

Once the corn was roasted and the chicken was done, I heated up some corn tortillas and filled them up with a little seasoned chicken, black beans, the tomato and grilled corn mixture, and some avocado chunks.
AHH-MAZ-ING.
And lucky me…I have leftovers for tomorrow. Wheeeeeee.
To go along with our chicken tacos, we heated up some frozen green beans which were actually kind of rubbery and gross and I didn’t eat very many of them. But I DID eat about four slices of fresh watermelon that I picked up at the store today.
What is it about watermelon in the summer time? It’s SO good!
So was the rest of this meal, for that matter.
Tonight, hubby has a softball game, so I’ll be heading out shortly to go cheer him on.

Those tacos looks good! Avocado is my fav topping and a must have for my tacos. Fruit is so hard to pick but I think I’d say a peach or nectarine.

strawberries, white peaches, and watermelon top my list for favorite summer fruits! when it comes to taco fillings, I really love the toppings on fish tacos: cabbage, avocado, and sriracha for some spice!!

Berries, berries and more berries are my favorite summer time fruits! I love raspberries, strawberries, blackberries, and blueberries!!!!! Love them all and I make smoothies, pies, crumbles, cereal toppers and eat them just plain! Did I mention that I love them? Berries, berries, berries!!!!!!!!! Yum!

mmmmm, I might be doing tacos for dinner now, those look so good!
Avocados+Tomatoes are basically my must-have for pretty much everything during the summer – salads, sandwiches, burritos/tacos, beans-and-rice bowls, as a topping on omelets, pretty much on anything! yum! I also love cheese, sour cream, cilantro and jalepenos, but can do without all of that as long as there are tomatoes and avocados. :)
I love fresh local blueberries, fresh Rainier cherries, white peaches, and good watermelon, and I use to love summer blackberry and boysenberry cobblers and crisps from the berry bushes along the creek behind my parent’s house when I was younger! Then the city ripped them all out because they took over the “greenspace” :(
Now I’m itching to go berry picking!!

favorite summer fruit by FAR is the cantaloupe! i’m actually just now starting to get acquainted with watermelon, but i really like it. in fact, my husband and i just did some vodka infused with watermelon AND blueberry. very summery and mixes well with lemonade :)

Yup! Coated after poaching, and I just poached it in some water and chicken broth. So easy!
