Springy Salads & Super Sushi

I don’t know about you, but my day included some straight-up amazing food. No doubt about it!

Breakfast went undocumented, but it was nothing you haven’t seen before…hello predictable cereal combo bowl.

Lunch, however, was documented and was one of the best I’ve had in a long time. A Springtime Roasted Chicken & Strawberry Salad.

I used some of last night’s leftover chicken & broccoli, as well as some fresh strawberries, as my inspiration for this meal. Along with those, I also added some spring mix as my base, cukes, dried cranberries, and chia seeds. It was one of those it’s-so-good-I-don’t-want-it-to-end salads. Winking smile

Along with my salad, I had a toasted piece of Farmers Market whole wheat bread with a little butter.

Of course, during lunch, sommmmmebody was in need of a little attention…

Tonight, I had plans to meet up with my friend, Gabby, for dinner at Sake Café. If you’ve been reading the blog for a while now, you’ll know that I’ve visited Sake Café a couple of times and it’s always amazingly delicious. I’d been looking forward to it all day…not only for the food, but because I realized I haven’t seen Gabby since her housewarming party in July! Disappointed smile

Since Sake is BYOB, Gabby and I sipped on a bottle of vino while chatting away and munching on some edamame to start.

I was pretty hungry when I got there, so I totally went to town on that edamame…it had no chance against me. Winking smile

Eventually, our sushi arrived, and I didn’t waste any time digging right in.

As usual, I went with the California Roll,

and an Alaska Roll.

Gabby and I had a great time, and my only regret is that I didn’t get a third roll. It was just so good!!

I can’t believe it’s already 9:15…seriously, where does the time go?!? Surprised smile I’m ready to crawl into my cozies and call it a night.

    i'm japanese and yet i'm not very adventurous with sushi...i love california rolls and maki sushi rolls, but when it comes to raw fish...i'm only brave enough for the salmon roll, and maybe the spicy tuna rolls.

    That salad looks AMAZING! I love to add fruit in salads! My mom used to eat a sushi roll with flying fish eggs and raw egg yolk. Always thought it looked disgusting!

    BYOB at a restaurant is so cool! I'm not very adventurous with sushi - I stick with California, salmon and tuna rolls :)

    I LOVE Sushi and Sashimi. I mostly eat Sashimi now - the raw fish without the rice or any accompaniment. It's my favorite. Weird, I know.

    I love your sushi choices! I'm nervous about eel, as well...and anything with extra roe on it. Fish eggs weird me out.

    Sushi is great. I tend to stay with the shrimp or tuna rolls. I'm not very brave when it comes to raw fish. I'm always afraid it will make me sick!

    Hmmm... I will try just about any type of sushi! I had a spider roll once and hated it- but I didn't realize it was soft shell crab. Ick! You should definitely try the eel! Eel avocado rolls are great, and they usually have the best sauce on top. I was sketched out at first, but it's now one of my favorite rolls! :)

    I love sushi! Had some for lunch yday and it totally hit the spot. Salmon avocado is my absolute favourite! You should def give teriyaki eel a shot. If you like the texture of salmon sashimi, you'll easily be able to handle eel.

    I need to stop reading your blog after meals because it makes me want more food! Hahaha. At lunch i wanted chocolate cupcakes, now I want a bowl of strawberries! Strawberry salads are the best; we make a strawberry asparagus salad every Easter, and it is one of my favs!

    I used to be afraid of eel until I tried it. Now it is my absolute FAVORITE! You must try it, it tastes so sweet with a hint of BBQ flavor. PS: I love BYOB, that's always a plus when going out :) $8 bottles of wine beat $8 glasses of wine any day :)

    Love me some sushi! It's funny that someone commented that they hated the spider roll--it's my favorite one! I don't like softshell crab on its own, but in a roll, it's amazing!

    Mmm, california roll. I avoid eel and raw fish like the plague, but I have accidentally eaten it. It just blended in with the other ingredients of the roll I was eating.

    I just got strawberries in my CSA produce box today - I could easily recreate that salad! Well, I'd actually have to roast a whole flippin' chicken first, but you know what I mean! :)

    I love sushi and will pretty much try anything although I think the fish eggs are rather gross. While the tempura rolls are bad for me, I must admit that they taste delicious. My fave roll is probably the Rainbow Roll, with all of the different little fishies,

    so weird! i swear i had almost that identical salad for lunch today, and i must agree with you, it was DIVINE. makes me want spring/summer to come even faster. cant wait for all the fresh produce. also, i noticed the relax riesling from your dinner! thats one of my favorites, i buy it a lot. the word relax on the bottle may or may not have something to add to it. ;) and lastly, i did your 4-3-2-1 treadmill workout this morning. it was a great and challenging one indeed. left me super sweaty which is rare for me. thanks for sharing!!

    I'm a sushi lover. I don't think there's any kind of sushi I wouldn't try. Eel was actually the first type of sushi I tried and loved it!

    I commented above but wanted to tell u I just had a Courtney-inspired lunch: cold grilled veggie salad mixed with pesto and cereal with fruit+soy yogurt :)...this has def gained a spot in my lunch rota :)

    I'm trying eel this Friday, my guy says its good but I also have a hard time with it. We've been eating sushi every Friday during lent and I lost a bet this week so as my "punishment" I have to have 1 bite of the eel this Friday. I'll let you know how it goes!! Also- are you on spring break already this week, or do you get to have lunch at home during work?

    oh my gosh, LOVE sake cafe! One of my favorite restaurants, I like that their food isn't greasy and tastes more authentic than most chinese/japanese restaurants. I'm not a major sushi person, but all of the other food I've ever gotten there has been wonderful. Its usually our go to take-out spot since its only 5 minutes from my house :)

    What a fun night :) Mmmmm Relax wine- love that brand! I can't believe you haven't tried eel- it one of my favorite things to get at sushi places. I LOVE it. So good..especially with the eel sauce. Delish!

    Oooh Sushi! I won't try eel because a friend of mine said it would offend my texture issues...I'm also not likely to try anything with a sauce. Gimmie my sushi with soy, wasabi and ginger! Have you tried Seven Daughters wine yet? It's great!

    I am a huge sushi lover and I really love the experimentation of it. Unfortunately as a vegetarian I usually have very limited options...but I did find a GREAT sushi place literally one block from my apartment that serves the. most. mindblowing sweet potato tempura sushi...ohmahgosh I actually had it last night but I could totally go for it again right now! They have an asparagus tempura roll too that's super phenomenal!

    I'm actually a really adventurous eater...especially sushi and sashimi because it is my favorite! I've tried eel and love it! I also tried baby octopus...it wasn't bad, just kinda wierd. I don't think I'd eat it again, but it's kind of fun to say I tried it.

    Love sushi!! But I will absolutely not try the sushi with fish roe on it!! Seeing all those little orange fish eggs on top of the roll bugs me out!! Random question but are you still teaching? It looks like you've been eating your lunch at home lately? Sorry if that's creepy that I noticed that, haha! Btw, I'm happy to see the pb cream cheese went to good use for the cupcakes!! I'll have to try that the next time I get more! :)

    I am a vegetarian so my sushi options are pretty limited but i still have my favorites! Sweet potato roll and pearl roll (avocado and peanuts) Before I stopped eating my I tried I few with salmon in them but the raw fish thing always prevented me from getting TOO adventurous!
