Summer days make me smile. The warmth, the sunshine, the endless amounts of activities…
Once the warm weather hits, my appetite is all about the cold and creamy; and what packs together that combo better than a cool, refreshing smoothie?
When I saw that Stonyfield was holding a summer smoothie contest, I couldn’t resist the challenge.
The criteria for the contest:
- Recipe must contain at least one cup of any variety of Stonyfield or Oikos organic yogurt
- No more then five ingredients may be used (the more organic, the better)
Now, I’m sure most of us have tried some form of a berry smoothie before. One of my favorites is actually raspberry, so there was my starting point. But something needed to be kicked up a notch; something needed to bring this smoothie from a “Plain Jane” to a “Sassy Sue.” I wanted a smoothie that could refuel my body after a long, hard workout. It took a few “trial & errors” in the blender, but eventually, a winning combo was created.
Would you ever guess that the secret ingredient in this smoothie is…avocado??
Raspberry Avocado Smoothie
Serves 1 large or 2 small

1- 6oz. container Stonyfield French Vanilla Fat Free yogurt

1/2 an organic avocado, peeled & diced

3 oz. organic raspberry juice (I used Cascadian Farms Raspberry juice concentrate)

1/2 cup organic frozen raspberries

1 oz. orange juice* (I used Organic Valley brand)
Puree all ingredients in a blender until smooth and combined. Add ice or water to adjust the thickness to your liking. ENJOY!
*Option: To make your smoothie pack more of a protein punch, swap a scoop of your favorite protein powder for the orange juice.
If you’d like, go ahead and embrace the season by topping your smoothie with a fancy umbrella. I promise, it will taste that much more refreshing.

This sounds so yummy! I LOVE avocados in smoothies! Actually, I love avocados in any form, but they add that certain delicious richness to smoothies, cakes and brownies! Mmmm!

Hmm, an avocado in a smoothie..can’t say I’d go that route, but yours does look awfully tasty and if I didn’t know it was in there, I’d drink it for sure!

I’ve used Avocados in smoothies before, they give such a decadent consistency. Probably wasn’t a smart idea to give the recipe up though when you are submitting this in a contest!
