Two Delicious Dinner Recommendations

This has been one BUSY week, my friends (and it’s only Wednesday?!). I’m pretty sure I’ve mentioned this before, but end of the month at work for me is always crazy. Add the fact that I was out for vacation last Thursday and Friday, and I’ve definitely had my plate full.

I’m hoping, and fairly confident, that I should get all caught up by Thursday so I’ll be able to enjoy the holiday weekend stress-free. Speaking of…does anyone have any fun plans for the 4th? My parents are having a little par-tay which means two things: plenty of fun and lots of good food.

And on Saturday, we’ll be heading up to Saratoga Lake which is always a great time. I’m hoping Sunday will be a quiet, relaxing day at home where we can get caught up on the 101 things that are sure to be waiting for us by that time.

But anyways…other happenings so far this week? Well, we FINALLY got our new pool liner in yesterday and are currently working on filling the pool back up with water. From the hose. Yes, it’s gonna be freezing…good thing we’ve got temps reaching almost 90 this week to warm that baby up!

I’ve also got three consecutive days of T25 workouts under my belt.

I know, I know. Me and my exercise ADD, right? I was kind of getting to a point where I felt like I was walking somewhat mindlessly into my workouts. And when that’s happening at 5:30am, it’s a recipe for disaster (aka, oh sure, I’ll hit that snooze button two more times while I figure out what I’m gonna do…and now, oops! No time left). My plan at the moment is to really try to follow through with the complete program (25 minutes, 5x a week? I can do that) but we’ll see where I’m at again at this time two weeks from now. Winking smile

We’ve also had a couple of delicious dinners the past two days which I had to share with you guys. The first came from the latest Cooking Light magazine (which had a ton of awesome recipes this month!) – Steak and Avocado Kabobs with corn on the cob.

The kabobs were simple, super delish, and really easy to make. I’d totally make them again, although I’d probably add a few more veggies on there.

Last night, we had some grilled, marinated chicken and pineapple with rice and green beans.

I hit up The Fresh Market yesterday for their chicken sale, and noticed that they also had chicken cutlets on sale, too. I figured sure, I’ll grab two of them to have for dinner, but never paid attention to how big they were…two of them weighed in at over 1-1/4 pounds! So we marinated it in this Trader Joe’s Soyaki sauce which. is. incredible. WOW.

Just a quick marinate in the bag, then Jay grilled ‘em up, along with some pineapple slices on top. I was a huge fan, and am quite excited about my leftovers I have waiting for me today for lunch.

Alright, that’s all I’ve got for ya today. Time to do the work thang…but it is Wednesday so you know what that means! Have a great day, everyone!

    I love the Soyaki sauce from Trader Joes, it has such a great flavor! This weekend I am heading up north to my parent's on the water to spend several days with my family. I can't wait!

    Haha I am doing T25 right now too, and I can relate to everything on that poster lol! It's a great workout! I am about to check out that steak kabob recipe, it looks fantastic!

    Ahhh I have been meaning to break out T25 for a while now! I think 5 days a week seems really reasonable for the plan, but I have a hard time sticking with things like that now because I crave variety. Also, I looooove that soyaki sauce! It's great on salmon!

    Ooooh, I just bought that Soyaki sauce this weekend - I'm so glad to hear it's a good one! Just think - it's a short week, so techincally today is Thursday! :) That'll get you through the craziness!

    Love steak with avocado! Definitely need to make some kabobs...we call them kebabs or just skewers! Would be awesome on the barbecue!

    Sounds like you guys have a great 4th of July weekend planned! We are going camping with my family... Should be interesting with a toddler. ;) Wish me luck. I'm excited though - we haven't been camping in forever! Both of your dinners look SO good! Isn't grilling season the BEST?!

    I love that TJ's soyaki sauce! I marinated wings with them one time and they were so delicious! I haven't tried T25 but have heard great things about it. I recently watched the infomercial and it looks pretty challenging!

    Oh mannn now you got me really curious about T25....I seriously do wonder though, what the difference is between that and Insanity. I have exercise ADD too, but it's all because I just love to try every kind of workout known to mankind! It's fun to incorporate everything, you know? ;)

    I've never tried that sauce from Trader Joe's!so I will definitely have to pick some up next time I am there! I love making kabobs for dinner. I usually use chicken or shrimp with peppers and onions. Love yous steak and avocado combo! Thanks for the ideas!

    I just finished with T25! I know you are a fan of yoga (and maybe pilates) so I wanted to mention a newer beachbody program PiYo, have you heard of it? So far it's really awesome. Let me know if you'd like more info.
