Such a fun weekend…I’m so sad to see it over!
Saturday was a busy day with not much to show for it (aka, I didn’t take many pictures). I spent a few hours in the morning at breakfast with my college girlfriends, and we did a bunch of stuff around the house. Jay started building a bench to go with out kitchen table and I am SO excited for it (P.S. – plans for the table should be coming your way SOON!), and Lucas and I also had some fun putting together some food and care packages (more on that below!).
We went and visited my father in law in the afternoon, and then my parents came to visit us at our house for a little while. Lucky Lucas got lots of grandparent time on Saturday!
Sunday was great. I challenged myself to my first early morning workout since basically being pregnant, and it was fantastic! Granted, it wasn’t as early as if it were a weekday (around 6:25am), but it was good to know I could do it and still feel good. It’s given me confidence to try some more for the week ahead!
Once my workout was over (T25 gamma Rip’T Up), I realized Lucas was already awake on me, so I brought him with me for an early morning grocery run (aka, the BEST time ever to grocery shop!). Bonus points for the super cool car cart being available…Lucas was in his GLORY!
We got our shopping done quickly then headed home to get some food and snacks ready for our company coming over for the Jets/Giants game.
I got a batch of chili going in the crockpot (SO GOOD, recipe coming soon…and sorry for the excess CAPS I apparently feel the need to do quite a bit of today), along with another batch of Creamy Crockpot Steel Cut Oatmeal to have for breakfast during the week.
I put together a few snacks for the afternoon, like crackers and cheese.
And we baked up a batch of beer bread to go along with the most amazing pan fried onion dip.
We’ve made this quite a few times and I should really share the recipe with you guys. It’s incredible.
Soon after, Brian and Mal stopped by and it was time to watch some football!
Brian and Mal are Giants fans and we’re (obviously) Jets fans, which made for a fun game. Even more so since the Jets won.
At about half time, we broke into the chili with some beer bread on the side.
Chili + freshly shredded cheddar cheese = A freakin’ +.
Mal brought over some delicious Caramel Apple Truffles (she always makes the most fabulous desserts).

Such a fun afternoon with these guys…almost like ‘old times’ when we used to do this, like, every Sunday.
But, of course, those weekends always ended too, so now here we are back to the work week. Let’s hope it’s a quick and easy one for all of us, right??

Sounds like a fun weekend! I hear you on hoping the weekdays go faster too! Especially around the holidays, I go to work and just want to be home hanging out with my family :)

That shopping cart is amazing! I have to wear my baby in a bjorn carrier when I go to the store. It is the worst! Now that he is older he tried to grab everything and he is super heavy!

Hey Courtney, do you prefer T25 or Piyo? I’m looking for a new program to start (I’ve done P90x and P90x3). I love yoga and running as well (although running is kind of put on hold for the most part due to lack of daylight on weekdays :) ). Do you feel like one of these programs is better for someone with my workout history/interests? I was leaning towards Piyo but I’m afraid I’m going to feel like I’m lacking cardio. Thanks!

Hey Vanessa! That’s a tough question because they’re both so different. I love doing them both at the same time, because I feel like it’s a great mix. I’ve heard from many cardio lovers that they really enjoyed the change of pace, but I’ve also heard from others that they didn’t feel like it was “enough” for them. Personally, I’ve never been a huge cardio person, so I’m totally cool with it. ;) PiYo is also easier for me right now, as there are a number of moves in T25 that I need to (or will soon need to) modify with being pregnant.
All of that said, I truly do believe that PiYo is definitely a great addition to cardio!

Looks like you had a great weekend – I love getting up early and going grocery shopping before it gets too crazy there! I made the mistake at going to Trader Joe’s around 1pm on Sunday. It was a mad house!

I love grocery shopping early in the morning! It really is the best not to have to worry about other shoppers. And it goes so much quicker! Those truffles look amazing.. will have to try them out! Glad you guys had a great weekend!

Speaking of delicious food, I started making Christmas cookies this weekend and two of the three I made were from your recipes – the chocolate raspberry bars and the dark chocolate turtle bars (made with graham cracker base). Both were a huge hit!! :-D

This weekend we made a huge brunch spread, full of egg whites, toast, homemade hash browns and waffles, it was so delicious I might have had leftovers for lunch as well!

I made the crock pot steel cut oats this weekend, and they turned out a little funky. There was a weird film on top or something. The only thing I did differently was use regular milk because that’s all I had. Do you think that would be why they turned out funny?

I’ve noticed that if I make them overnight and they don’t get stirred at all while cooking then they will get a bit of a film on top. That’s why I’ve started making them on a Sunday morning so I can stir them up every once in a while!

Mal’s chili is a staple in our house. To the point people ask if it’s Mal’s recipe, like I have a buddy named Mal who made it at a party one time!!!! Lynchburg Va love to Mal!!!! I can’t imagine you found a better one than that!!! ????
