Weekend Fun + We Have Half a Kitchen! {House Update}

Hello! And happy Monday to you. Did you all have a fabulous weekend? Ours was really great, and for the first time in a while I was feeling much more like myself.

Starting with Friday night…it was a bit of a rough week on the work front, so I was more than happy to break open a bottle of wine and sip that on the back porch with Jay and the parents. Cheers to the weekend!

Even better? Mom had made homemade mac & cheese earlier that day, so we all chowed on that for dinner Friday night. SO good.

And then we even had dessert while watching an episode of House of Cards. So, really, Friday couldn’t have gotten any better, could it? I think not.

Saturday morning started out with iced coffee and homemade waffles, courtesy of Papa.

I’ll tell ya…I think I’m going to miss all of these meals once we’re in our new house!

Saturday also included my first Pump workout with the new weights and I. was. pumped. (pun intended).

Jay came down to see what the workouts were all about, and I tried to convince him that he needs to do it, too. So we shall see. But I cannot even begin to tell you how happy having this workout makes me!

After a couple of hours of  doing things around the house while Lucas napped, we headed up to Saratoga Lake to celebrate the wedding of one of Jay’s uncles. It was a beautiful day, and absolutely perfect (despite being a bit warm and muggy) for being lakeside.

We all enjoyed some snacks and a couple of beverages while hanging out and chatting with family.

And of course, with this guy around, that also means there was plenty of running around and playing near the water.

He’s always keeping us on our toes, that’s for sure!

I woke up on the earlier side Sunday morning, and rather than wait til later in the day, I decided to just get up and get the grocery shopping done early. I absolutely LOVE getting the shopping done and out of the way for the day. Anyone else?

Unfortunately, our week ahead is looking a little crazy in terms of trying to meal plan, so that didn’t really happen (and it hasn’t really the past two weeks…hence, the lack of weekly meal plan posts!). But I’m not sweating it. Soon enough, we’ll be re-settled and the chaos of summer schedules will wind down. For now, we’re just going with the flow.

But even though I don’t necessarily have a meal plan in place for the week, my mom and I did do some food prep.

A couple of salads for the week, a batch of Chicken Parmesan Meatballs for Lucas (aka, likely us because he probably won’t eat them) and a batch of The Best Ever Chicken Salad for last-minute dinners and/or lunches for the beginning of the week.

Around noon, after putting Lucas down for his nap, we left him with my parents and headed over to check in on the new house.

And let me tell you…I am SO EXCITED to see it coming along!!! Here’s a few pictures to share…

As of right now, we’re still scheduled to have our first official walk-through on August 6th, which is only a few short weeks away. Eeeeeek!!

Once we got back from checking out the house, the sun started to shine, so we had a quick lunch and hit up the pool.

And mom even made a batch of our favorite cookie dough dip to enjoy poolside…ohhhh myyyy do I love this stuff.

Unfortunately, our pool time was cut a little short, thanks to some storms that rolled in…

But we still had plenty of fun out on the porch!

Even though Binx (my brother & his girlfriend Carissa’s dog) may look like he disagrees.

We all had a delicious early dinner, complete with homemade potato salad, fresh peas from dad’s garden, and chicken (for me, the rest had sausage…not my thing) with sautéed peppers and onions.

And for dessert? Yellow cake with strawberry jello, strawberries, and whipped topping.

Seriously…SO much good food this weekend, right? It really was an awesome weekend, and I was quite sad to see it come to an end.

But now here we are, back to Monday, so time to make the most of it! Have a fabulous day, everyone! <3

    Grocery shopping first thing is my favorite; the stores are quiet, shelves are stocked and I always feel productive! Your house looks gorgeous! It's moving along so fast, how exciting!

    I can't wait to see the house all finished. It's so cool to see it come together! And that dip totally reminds me of cookie dough frosting I made this weekend! Pairing it with Teddy Grahams sounds dangerous - and perfect :)

    I'm reading posts on Body Pump more frequently lately...definitely sparking my curiosity about trying it at home since they don't offer it at my. Can you share what Body Pump DVD you are doing? Or maybe you've mentioned it in a previous post already.... Looks like a jam packed weekend. Your kitchen (& house) are really starting to take shape....that must be SO exciting!! And that Cookie Dough Dip.....um, yeah, you can bet I saved that recipe to make PRONTO! Mmmmmm. :)

        I actually got the Les Mills Pump DVD from Beachbody but, unfortunately, they don't sell it anymore! I've been on the lookout though, because many of you have asked, and I promise I'll share as soon as I hear something good!!

    looks like a fun weekend with so many good things! love Saratoga and was there the last 2 wknds, but spent this past wknd in Montauk with the girls. so necessary to be by the water (and with drinks is always a plus!) in this heat! yay for the new house coming along!

      Aww, thanks Christina! I usually put it in a low, messy "bun" when it looks like that (aka, half wrap it up in a ponytail holder about 3 times). So the back is usually a bit on the messy side, so I just try to make sure the front is smoothed out!

      Hmmm, that's a good question. We typically finish it all up within about 3 days, so I can't much to anything beyond that. ;) But it's still delicious on day 3! ;) And I'm sure it would still last another good couple of days.

    Aw, your family sounds so great! Even though you aren't in your new house YET, it sounds like you are getting spoiled with yummy meals and some babysitting - how nice.     I just want to say I'm totally jealous of all of your family time and meals with your parents!! Not only does everything always look so tasty (plus, why is everything better when someone else makes it for you?!) but you get to spend time with your mom ... My mom passed away in December and I miss her every day! Soak up all that time with your sweet family and keep posting all the pics! <33
