Hey guys, happy Sunday!
I’m keeping today’s post short and sweet – and actually, I almost didn’t even bother to write it because this post is hardly a “meal plan.” Rather, it’s most like “meals we threw together quickly + meals we were too lazy to make ourselves.” But hey, we can’t all eat like kings every week, right?
That said, here’s a look at what our dinners looked like this past week…
Sunday: Egg, cheese, and avocado sandwich on whole wheat bread
Jay was gone for most of the day at the hospital with his dad and said he wouldn’t be back til late, so not to wait for him. I really didn’t feel like cooking much of anything at that point, so I went for the egg sandwich. Simple, but a good mix of protein + healthy fats + dairy + carbs. Thumbs up!
Monday: Dino nuggets with BBQ sauce + rice with peas and carrots
Umm yes, this was a “what the heck are we going to eat tonight” meal after putting Lucas to bed. We hadn’t grocery shopped yet and had nothing exciting to eat. I almost opted for pancakes, but dino nuggets took the win.
Tuesday: Takeout grilled chicken salads from LaBella’s (some of our favorites!)
We still hadn’t grocery shopped at this point…can you tell?
Wednesday: One-pan chicken with red potatoes and green beans (more details in Friday’s post!)
Guess what…I grocery shopped!
Thursday: Out to dinner with the girls – Baja tacos with beans and rice and margaritas on the side.
Friday: Grilled london broil with butter noodles and green beans + wine
I hardly ever cook on Fridays, but considering what the rest of our week looked like, we made an exception. Plus, I bought the steak on Wednesday so we wanted to cook it while it was still fresh. Not too shabby for a Friday, right?
Saturday: Out to dinner at Bonefish Grill! I’ll share more details tomorrow.
Alright guys, I’m off! We’re heading out apple picking early this morning, so fingers crossed that we find some good ones (and by good ones, I mean good cider donuts)

Avocado and egg! Never fails!!! I made Coq au vin this week…and my first homemade hollandaise as well as countless pumpkin recipes of the sweet variety!

Our meals were pretty bad this week. Pizza Sunday, Tuesday, and Friday, frozen chicken tenders one night, cereal another night. Ive been lacking inspiration in the meal planning lately!

Love breakfast for dinner! Especially on a sunday. That sounds like the perfect breakfast sandwich. I could go for some avocado and eggs right now.

I always opt for easy meals when Jesse is away as it seems like such a waste cooking just for me, haha! Case in point, tonight I’m planning on having a wrap for dinner as he’s currently away for work :P
