Weekly Meal Plan {10/2}

Happy Sunday, everyone! I’m getting a little bit of a late start today since we were out last night for a wedding and it had completely slipped my mind to put this together until this morning. But hey, better late than never, right?

So let’s just jump right in today…

Sunday: I think we must have had leftovers because I can’t recall anything we had and I don’t have any pictures to show for it!

Monday: ‘Cheeseburger’ Salads made with leftover Cheddar Bacon Ranch Chicken Burgers, lettuce, tomato, carrots, pickles, shredded cheddar, and rushed potato chips

It was slightly random but really good! Definitely a fun way to use up any leftover burgers you might have on hand.

Tuesday: You already saw this one – Grilled chicken with sweet potatoes and veggies

Wednesday: Farmer’s Market Vegetable, Beef, and Brown Rice Salad

This was one of the recipes that we tried as part of my participation in the 30 Day Protein Challenge and it was really good! Not only that, but it was super filling, too (thanks to the beans and beef!).

So far, things have been good with the challenge. I’ve found myself reaching a lot more for eggs for breakfast (or lunch, when I’m home) but I’m still working on coming up with more good snack ideas. One thing I have noticed though, is if I eat too much protein, then I definitely start to feel a little uncomfortable. So I try to make sure I don’t go too overboard on the protein at any one particular sitting and work on spacing it out throughout the day.

Thursday: Chili with cornbread (recipe coming sooooon!)

And, as always, I used this recipe for the cornbread. Definitely one of my favorites!

Friday: Slow Cooker Balsamic Chicken served over pasta

This recipe was in a recent issue of All Recipes magazine that I got, but I can’t seem to find the recipe on their website anywhere?! It was pretty good, but I feel like the sauce should have been a little thicker. I’ll keep looking for the recipe or will come back and add it in here!

Saturday: Wedding time!! I ordered the Chicken Cordon Bleu – not too shabby!

    I love these posts. Thank you for writing them again. I was wondering if you could go back to trying to include snack, breakfasts, and lunches (you did for a few posts and it was great!). Also, what did you mean by you get "uncomfortable" when you eat too much protein? Do you find that you stay satiated longer when eating eggs for breakfast vs something like oatmeal?

      Haha, I promise...if I had the time, I would definitely try to add that portion of the post in each week! Sometimes it's just not in the cards though. And by uncomfortable, I meant gas pains ;)

    The slow cooker chicken and pasta looks delicious. I'm at school for 11 hours tomorrow, so I'll be making butter chicken and rice as well as a stir fry to take with me.

    I made chili last week too! We make a lot of salads for dinner, with this dressing: http://www.foodnetwork.com/recipes/ina-garten/bibb-salad-with-basil-green-goddess-dressing-recipe.html So good!
