Hey guys! I’m keeping things short and sweet today because it has been a long and busy Saturday and after I finish typing this up tonight, I’m hoping to be able to go veg for a few minutes and maybe even be able to say more than five words to Jay without being interrupted by children. Ha!
We had some really good meals this week, including a few favorites that we like to keep in the rotation. Take a look…
Sunday: Leftovers night. No photos and don’t even remember what I had!
Monday: One Pot Lasagna Soup
This is still one of my absolute favorite soups!! We also had some Italian bread on the side for dunking. YUM.
Tuesday: Brinner! Pancakes + bacon
I’m totally thinking that “Brinner Tuesday” needs to become a thing over here. It’s so quick and easy…and honestly, you can’t beat pancakes and bacon, can you??
Wednesday: Grilled sirloin with homemade mashed potatoes and green beans
Thursday: Asian Sweet Chili Sesame Chicken with jasmine rice and green beans
(recycled photo because I forgot!)
This is another favorite recipe of ours that gets made on repeat. Crockpot meals = THE best!
Friday: One Pot Italian Chicken and Orzo
The picture doesn’t do this recipe justice because it was really, really good. It got even better as it sat a bit more, too, because it continued to soak up the liquids (so if you make it and it’s a little liquidy, be sure to wait a little bit!). We topped ours with some extra parmesan cheese – SO good!
Saturday: Lazy day. Pizza with sausage, peppers, and onions x2…with a side of sugar
We tried it from a different place from our usual spot and it was good, but it was a little bit too greasy. Ahh well, whatcha gonna do, right?
How about you guys? What’s on the menu for the week ahead?

Thanks again Courtney! I will be using your menu plan this week :) I’m going through a hard time medically and it truly takes stress off my plate! I know you’re overwhelmed with so many jobs, but know you make a difference!
