Happy Sundayyyyy! Everyone got their meal planning game faces on??
This past week, simple was the name of the game. Most of our meals came together incredibly quick, and/or were super easy to cook up. For those of you who are in the same boat as us with what can be a rather chaotic dinner time hour, I think you’ll appreciate some of these meals!
Here’s what we’ve got…
Sunday: Takeout Hawaiian Pizza (x2)
We were lazy. We ordered takeout. It was perfect.
Monday: Burrito Bowls made with taco beef, brown rice, lettuce, tomatoes, corn, shredded cheddar, and salsa
These came together SO quick and they’re super easy to make and customize. I would have added avocado too, but we were out. They were also nice and filling, thanks to the protein from the beef – definitely a great meal to incorporate while we’re trying our 30 Day Protein Challenge! Have you joined yet??
Tuesday: Double Duty Quesadilla Casserole
This was actually one of the freezer meals I made before Alex was born (check out THIS POST for details!) and I had completely forgotten about it because we had it down in our basement freezer. It may not look too pretty, but it was delicious. AND, you can’t beat just taking it out from the freezer and popping it in the oven!
Wednesday: Pasta with sliced chicken sausages, sautéed peppers and onions, and marinara sauce
This is another quick and easy meal to throw together. And you get your carbs, your protein, and some veggies, too!
Thursday: Chicken Bacon Ranch sandwiches with…no sides.
Dinner time got a little crazy that night so we never bothered to cook up any sides to go with the chicken sandwiches. We marinated and cooked the chicken on our Griddler (I sliced the chicken breasts in half to make cutlets so they’d cook quicker!), and topped them with some cheese, bacon, and ranch dressing. It looks totally boring, but it was good.
Friday: Cheese burgers with sautéed onions and French fries
We had NO food in the house for dinner, so Jay stopped at the store to pick up some burger patties. We had a package of hamburger buns that we wanted to use up so they wouldn’t go to waste (hence Thursday and Friday’s dinners!) so this worked perfectly. I still love me a good cheeseburger – especially with sautéed onions on top!
Saturday: Salads topped with grilled chicken, cucumbers, carrots, tomatoes, fresh cheddar cheese, dried cranberries, vermicelli pasta, croutons, and homemade honey mustard dressing
This salad was actually inspired by the Honey Crisp Chicken salad that Jay and I used to get all. the. time. from Pizzeria Uno way back in the day (like, high school era…I was surprised to see they still have it on their menu!). The cold vermicelli is definitely different but SO good. If you’ve never tried it on a salad before, I’d definitely recommend it!

- English muffins with peanut butter and banana
- Eggs + toast
- Voluminous Oats!

My boyfriend and I had Hawaii pizza last night for date night. It definitely hit the spot. Today is Thanksgiving her in Canada so I’m looking forward to turkey and cranberry sauce. I’m sure I’ll be eating lots of leftover throughout the week too.
